Yesterday was our 4th Anniversary. Somehow, Yuki’s been able to tolerate being married to me for 4 years. Not sure how, so I’ll just roll with it. With a 7 week old we are not able to go out for fine dining to celebrate. No worries, I prefer to cook anyway. Even though it’s not a pricey cut, I’ve always thought of lamb shanks as being a special occasion piece of meat. If done right, it should be fall-off-the-bone tender with a rich lamb taste uncomparable to any other part of the animal. I’ve never braised a lamb shank before, but since I’ve done my share of braising with other cuts, I knew I’d end up doing it right. For this recipe I made two portions of lamb, but 4 portions of accompanyments.

I used 1/2 bunch of arugula, a few sprigs of fresh thyme, a few sprigs of fresh tarragon, 5 garlic cloves peeled, 1 carrot roughly chopped, 1 rib of celery roughly chopped, 1 leek sliced, 2 lamb shanks that each weighed about 3/4 lb, 1 cup of red wine, 3/4 cup of chicken stock, and a 14oz can of diced roasted tomatoes.

When I braise large quantities of meat I use  my big Le Cruset stock pot, but I have a skillet that’s large enough for 2 lamb shanks. So, I heated it up, poured in about 2 tablespoons of olive oil, and browned the shanks. That took about 3-4 minutes on each side. Then I set the shanks aside.

I put the carrot, celery, leek, and garlic in and let them sweat down for about 7 minutes. I wanted them to just start carmelizing to add their sweetness to the braising liquid.

Then I poured in the wine and let it reduce by half, scraping up the little burnt bits stuck to the bottom of the pan. That’s where all of the flavor is. Once the wine was boiled down I added the tomatoes. After they came up to a boil I poured in the chicken stock and added the thyme. I seasoned with some salt and pepper and then put the shanks into the liquid. I covered the skillet, turned the heat down to med-low, and let it simmer for about 1.5 hours.

While the shanks were braising I threw together the sides. One was simmered chickpeas. I used a 14oz can of chickpeas, 3 garlic cloves minced, 1 rib of celery diced, 1 carrot diced, 1/4 onion diced, 10oz cherry tomatoes, a couple of thyme sprigs, and 1/4 cup of chicken stock.

I simply threw it all into a pot and let it simmer for about 20 minutes. Before serving I removed the thyme and seasoned with salt and pepper.

I also made some mashed potatoes. I used 5 yukon gold potatoes skinned and chopped, 3 cloves of garlic skinned, 1/2 cup of milk, and 3 tablespoons of grated parmesan.

I put the potatoes and garlic into a pot with cold water, brought it up to a boil, and let it boil for about 20 minutes until the potatoes were soft. I poured out the water, added the milk and parmesan along with some salt and pepper, and mashed it all together.

With the sides ready to go I finished up the shanks. I removed the shanks and put them into a smaller pan. Then, I strained the braising liquid. I discarded the solids and poured the liquid in the pan with the shanks. I brought it up to a boil and added the tarragon. I let it boil for about 15 minutes. This allowed the tarragon flavors to infuse into the liquid as well as reduce it by half.

Then I plated everything up. After placing the shanks on the plate I removed the tarragon from the liquid. I added the arugula and let it boil down for another 5 minutes. I checked the seasoning and then covered the shank with it.

I have to say, even though this is a time-consuming recipe, it’s absolutely delicious! The meat was extremely tender and flavorful. While eating this Yuki commented that I could charge $40 for this dish. Not sure about that, but it’s definately a $28 dollar dish, at least better than most lamb you get at restaurants. Well worth the effort for a special occasion.

Punjabi Bolognese…sounds kind of weird, right? Well, it isn’t, its delicious! Basically, all I did was take a classic Punjabi dish called Masaledar Chholay (spicy tomato sauce with chickpeas) and add a few things, take away some of the heat, and smother some pasta with it. It really worked out well and is a nice change from regular bolognese.

I had already started my prep when I realized that I need to take a photo. So, here are the ingredients all chopped up and ready to go. I had a handful of cilantro that I ripped up at the last minute of cooking, a bunch of rapini chopped up (not an Indian ingredient, but I thought the mustardiness would match real well, I was right of course), 1 medium sweet potato diced, 2 medium carrots diced, 1/2 onion diced, 1 inch of ginger minced, 3 garlic cloves minced, 3/4 pound of ground lamb, 1.5 tablespoons of cumin, 1 tablespoon of garam masala, 1/2 tablespoon of turmeric, 1 14oz can of diced tomatoes, and 1 14oz can of chickpeas.

In a hot pan our poured in 2 tablespoons of olive oil and added the ginger and garlic. I let them go for a minute until the oil was very fragrant. Then, I added the onion and carrots. I let them sweat down for about 5 minutes before adding the lamb. It took the lamb another 5 minutes or so to cook through as I broke it up. Once cooked through I added the spices and mixed them in.

With the meat spiced I poured in the tomatoes along with the juice in the can and let it come up to a slight boil. Then I added the rapini and sweet potato, stirred it all in, covered the pot, turned the heat down to med-low, and let it simmer for about 15 minutes.

After that I added the chickpeas, seasoned with salt and pepper, and let it simmer for another 5 minutes or so. Since I used canned chickpeas I only needed them to heat through.

While the chickpeas were heating up I boiled a mix of regular and wheat spaghetti in salt water according to package instructions. To serve I simply put the noodles in the bottom of a big bowl and ladled some of the Punjabi Bolognese on top. I garnished with the cilantro.

Ground lamb was on sale at the store, so I picked a pound up and made this Indian-style curry with it. Usually, curry is made with chunks of meat, I improvised since ground lamb was cheaper.

First thing I did was make the meatballs. I put the lamb in a glass dish, sprinkled 1 teaspoon of ground cumin on top, then grated in 1/2 a red onion,  2 garlic cloves, and 1/2 inch of ginger. A little salt and pepper and I mixed it all together.

After letting the mixed meat sit for about 10 minutes I rolled it up into quarter-sized balls. I let them sit in the fridge to hold shape while I got the curry sauce ready.

For the curry I used 1 cup of coconut milk, 1 carrot rough chopped, 1/2 red onion rough chopped, 1 medium-sized yam skinned and diced, juice from 1 lime, 1/2 inch ginger chopped, 4 garlic cloves chopped, about 3 ounces of baby spinach, 1 can of diced tomatoes, 1 can of chickpeas, 1 teaspoon each of garam masala, cinnamon, cumin, turmeric, and coriander, and the seeds from 4 cardamom pods.  There’s a big juicy orange bell pepper in the picture, but I decided not to use it for the curry.

With my pestle and mortar I ground up the coriander seeds and cardamom. I added the rest of the spices to this mixture.

I threw everything except for the yam, chickpeas, lime juice, and spinach into my blender and let her rip until I had a nice smooth sauce. I decided to add 1 tablespoon of flour while it was blending to help thicken it up while I cooked it.

I heated 1 tablespoon of ghee in a large skillet and browned the outside of the lamb balls. Once they got some color and I was sure they’d hold their shape I removed them with a slotted spoon leaving behind the ghee and lamb fat.

I poured in the curry sauce and let it come to a slow simmer for about 10 minutes to take the rawness from all of the veggies that were in it.

Then I added the diced yam, chickpeas, and meatballs. I let them cook in the curry for about 15 minutes to make sure the meatballs were cooked through and the yam not too hard. Just before taking the curry off the heat I added the spinach and mixed it in so that it wilted slightly. Then I turned off the heat and mixed in the lime juice while seasoning with salt and pepper.

I served it with white rice and garnished with some fresh cilantro.

So, my little brother took us out to eat at Essence Of India last night, so no Meatless Monday. We did get vegetarian samosas and a chickpea and spinach dish though, so we did partially do Meatless Monday (not inlcuding our lamb and chicken). Since I’ve already blogged about that joint a while back here’s what I made for dinner this past Friday, kefta kabobs.

I used a 1/4 onion, a piece of ginger, 1 garlic clove, 1 tablespoon of paprika, 1 teaspoon of cumin, 1 teaspoon of dried basil, 1 teaspoon of dried oregano, and 3/4 pound of ground lamb.

In a glass bowl I plopped the lamb meat and grated the onion, ginger, and garlic on top. In a small sauce pan I heated up 2 tablespoons of olive oil and put all of the dried spices in. I let them cook in the oil for about 1 minute. Then I turned off the heat and let the spice mix cool for about 5 minutes. After that, I poured it on the meat and seasoned with salt and pepper. That all got mixed together in order to mix the flavors evenly throughout the meat. I formed 4 oblong “sausages” out of the meat and then put it in the fridge for about a half hour to let the meat firm up.

On the side I made some chickpeas with vegetables. I used 3 plum tomatoes chopped, 2 garlic cloves minced, the other 1/4 of onion diced, 1 red bell pepper diced, 1 14 ounce can of chickpeas, 1 large handful of baby spinach, and 1/2 teaspoon each of cumin, cayenne, and turmeric.

In a heated pan I poured about 2 tablespoons of olive oil and then tossed in the onion, carrot, and bell pepper. I let them sweat for about 6 minutes and then added the garlic. About a minute later I added the tomatoes with all of their juices and let them break down for about 4 minutes. Then the chickpeas went it along with the spices with salt and pepper. Once the chickpeas were heated through, about 4-5 more minutes, I added the spinach. I turned off the heat and covered it. The residual heat wilted the spinach and keeping it covered gave me enough time to grill the kefta.

While the grill was heating up I took 4 bamboo skewers that were soaking in water for an hour and pushed them through the cold kefta. I oiled the grill and then cooked the kefta for about 4 minutes on all four sides.

Instead of regular white rice to go with everything I used basmati rice. I used chicken stock instead of water along with a pinch of turmeric for color. I would have used saffron, but I’m out. I chopped up some cilantro and garnished the plate.

I had an eggplant left from my shopping excursion to the HMart that I wanted to use last night. Not wanting to do my typical grilled-eggplant or stir-fry I decided to stuff it instead. Ground lamb seemed like the perfect partner.

Hollowing out an eggplant is a pretty easy thing to do. First, you have to cut it in half length-wise. Then, I took my pairing knife and cut around the edges of the eggplant about a quarter-inch from the skin, carefully making sure I didn’t pierce the skin. After that I cut a bunch of lines through the width and length.

With a small spoon (a serrated grapefruit spoon would work great, but don’t worry if you don’t have one, I don’t and I made it work with a regular spoon) carefully scoop out the flesh. Save the flesh as it’s going to be used later on. I sprinkled some salt all over the inside of the eggplant and then let them drain in a colander for about a half hour while I prepped the rest of the ingredients. This removes some of the bitter juices.

For the stuffing I diced up a green pepper, half an onion, a carrot, one tomato (I scraped out the seeds), some spinach, the eggplant flesh, three cloves of garlic, some rosemary from my back porch, a quarter cup of white wine, and 2/3’s pound of ground lamb.

I started off by sautéing the onion, green pepper, carrot, and garlic in a quarter cup of olive oil. Once the vegetables were slightly translucent, about 7 minutes, I added the eggplant flesh and let that cook down for another 7 minutes. Then I seasoned with salt and pepper and added the lamb. It took about 5 minutes or so for the lamb to be fully cooked. Once the lamb was broken down I poured in the wine, let it come to a boil, and let it simmer for another 5 minutes. Then I turned off the heat, added the rosemary, spinach, and tomato, and stirred it all together.

I wiped the salt out of the eggplant skins before stuffing them with the lamb mixture. Fill them up over the top, as much as you can before it all falls out. There will be extra stuffing, just put it in the fridge and toss it in some pasta or something for lunch the next day. I laid the stuffed eggplant halves in a lightly olive oiled baking pan and threw it in a 375 degree oven for about 30 minutes.

I had just enough time to make creamy polenta while the eggplant cooked. In a stock pot I poured in 4 cups of water, some salt, a bay leaf, and 1 cup of polenta. That’s enough for 4 portions. I brought it up to a boil over high heat. Once boiling I slowly poured in about a quarter cup of olive oil and turned the heat down to medium. I continuously stirred for about 25 minutes, until the polenta started to pull away from the sides of the pot. At that time the eggplant was done and I was ready to serve.

I poured some polenta in the middle of the plates, put an eggplant on the polenta, and topped it all with some crumbled cotija cheese. I served some white rice on the side.

Overall this dish was delicious. If I ever make it again I would make a couple of changes though. First, I’d add some spice to the lamb mixture, maybe some cumin, or turmeric, or garam masala. Second, I wouldn’t put a bay leaf in the polenta. That was the first time I used bay in polenta. It gave it kind of a medicinal taste. Yuki said it tasted like Walgreens. It wasn’t that bad, just not what I wanted. Otherwise I’d keep everything about the same.

Alright, I’m Jewish and not Mexican. But hey, both of our cultures were slaughtered by the Spanish so we share the same plight. Not really, but my mom lives in Mexico. To celebrate Mexican Independence I made my first attempt at a mole. Whole Foods had these fantastic lamb shoulder steaks on sale. Using a Oaxacan Red Mole recipe as my base, I altered it to fit the ingredients I could find as well as to make it more of a braise to break down the fat of the shoulder cut instead of a sauce like you typically see with a mole. While it’s usually not the best idea to screw around with a recipe you’re unfamiliar with, especially one with as many steps as mole, I’m confident enough in myself that it was no problem. The results almost couldn’t have been better!

To start, I soaked 3 ancho chiles and 4 New Mexico chiles in boiling water. I was looking for guajillo chiles, but couldn’t find any. So, I used the New Mexico ones instead. I have absolutely no idea if the two chiles are at all similar, and still don’t, but thought it was a risk worth taking.

While the chiles were soaking I heated up a skillet and, one spice at a time, toasted 1 tablespoon of sesame seeds, 1/4 teaspoon of whole black peppercorns, and 1/2 teaspoon of dried oregano. Once cooled I ground them up with my pestle and mortar.

Then I used the same hot skillet to roast two garlic cloves. Keep the skin on the cloves and just let them sit in the hot pan for about 2-3 minutes per side. When they were cool to touch I put them in the blender with a 14oz can of diced tomatoes and made a smooth puree.

I cleaned out the blender. I de-stemmed and de-seeded the chiles and pureed them with about a cup of the soaking water which had taken on a lot of the chile flavors and aromas. The recipe I was using only called for a tablespoon or so of the water, just enough to puree the chiles. Since I wanted a braising liquid instead of just a thick sauce I used a lot more of the water. I also set some aside in case I wanted to add more, but didn’t need to. After the chiles were pureed, I strained them into a bowl and set aside.

Alright, time to put the mole together. I heated up about 3 tablespoons of soy oil and added the spice mix from my mortar. After about 15 seconds I poured in the tomato sauce and then the pureed chiles. Careful though, it splatters! I mixed that all around. Once it started to boil I added 1/2 cup of sugar, 1.5oz of Mexican chocolate, and 1/2 teaspoon of cinnamon. I let that come to a gentle boil.

While the mole was coming up to a boil I heated up some oil in a hot skillet, cut the lamb steaks into bite-sized pieces, and seared them off in batches. As they were seared they were tossed into the mole. I let them braise in the mole for about 30 minutes then I added two chopped carrots and let it all braise for another 45 minutes. The sauce became nice and thick.

For starch I made some cilantro mashed potatoes. I took 4 good-sized russets, skinned them, quartered them, and tossed them in a pot with cold water. I added salt and three large peeled garlic cloves. Then I brought it up to a boil. Once the water started to boil I let the potatoes go for about 25 minutes.

While that was going on I took a handful of cilantro and blended it with about 2/3 cup of soy milk. I then took 4 tablespoons of butter and cut that into smaller pieces. Once the potatoes and garlic were cooked I drained them and added them back to the pan. I poured the cilantro milk in and mashed it all up real good one pat of butter at a time. Then I seasoned with salt and pepper. They might have been the best damn mashed potatoes I’ve ever made!

For a side I heated up some olive oil and threw in two cloves of crushed garlic. A few minutes later I added 1/2 of an onion chopped and let that saute down a bit. Then I threw in a jalapeno that was seeded and sliced. A few more minutes and I threw in a bunch of sliced mushrooms. I had a few shiitake left in my fridge as well as a carton of buttons. Once those were almost cooked through I tossed in 1/2 radiccio that I had thinly sliced. I let that all wilt down, seasoned and then served. For garnish I broke up some cotija cheese.

To garnish the mole I diced an avocado. I also diced a red onion and soaked it in water for most of the day to draw out the rawness. Besides those two garnishes, I laid a few cilantro sprigs on top.

I have to say, for a Jew, I make a mean mole! The ony thing I think I’d do different is cut the sugar from 1/2 cup to 1/4 quarter cup. It was slightly sweet, but not so much that it was bothersome. Soy chingon!!!

Lamb, the prefered meat in Europe and a fantastic animal to stew up with veggies. With Spring in the air, but still a very chilly breeze shooting through Chicago, I thought that a simple Lamb Stew would be a great dinner. Not to mention I had a nice bottle of Syrah I wanted to drink, a nice match with lamb.

I first sautéed up a small onion that I diced up to medium-sized pieces with a chopped carrot, two stalks of celery chopped, and 4 cloves of minced garlic in some olive oil over medium-high heat. After a few minutes, when the veggies were turning translucent, I added a couple of large diced Yukon Gold potatoes. I didn’t want to add the potatoes too early because they fall apart when stewed for long periods of time. For long stews it’s usually best to use a denser potato like russet. But, I had a couple of Yukons that I needed to use up so I added them late to keep them together.

Only a couple of minutes after adding the potatoes I threw in about a pound of cut-up lamb leg meat. You want about 1 inch cubes. Anything smaller and the meat will get tough. I let the meat cook a little until the outsides were cooked but not the insides. Then I added a bunch of quartered cremini mushrooms and stirred that all around.

Once everything was coated with the olive oil and lamb fat I seasoned with a little salt (not too much), turmeric, cumin, dried basil, and a bay leaf. Then I added about a quarter cup of soy sauce and 2/3 cup of beef stock. Once the liquid came to a boil I put the lid on my pot and turned the heat down to medium. I let everything stew together for about an hour.

Once the stew was about ready I threw in a handful of freshly chopped parsley and turned off the heat. I served it up with some sliced bread. Well, I had it with sliced bread, Yuki had it with white rice. Whatever your pleasure, it’s all good.

Last night I made some delicious Lamb Kofta with the leftover berbere spice from the Doro Wat. I thought I’d stick with a Middle Eastern theme by serving it with some homemade Baba Ghanoush, roasted red pepper and yellow string beans, and an Israeli Couscous and Tomato soup. Of course, it wouldn’t be complete without some pita.

Before I made the kofta, I roasted two eggplants on the burner for the baba ghanoush. Once the skin was nice and charred I set them in a bowl, covered them with plastic, and let them sit for an hour.

So, to make the kofta I mixed in the berbere spice (there was about 1.5 tablespoons left), 1 teaspoon of turmeric, salt, pepper, 6 grated garlic cloves, half an onion grated, 1 jalapeno seeded and diced, 1 slice of bread crumbed, 1 beaten egg, 1 tablespoon of tomato paste, some chopped cilantro, and the juice from a half lemon into 1 pound of ground lamb. Once mixed I let it rest for a half hour covered in the fridge.

After the meat was rested, I wet my hands and formed 8 patties. They were set aside until time to cook.

Then I started on the couscous. I sautéed half an onion in some olive oil for about 10 minutes, then I added three grated garlic cloves. A few minutes later I threw in a diced carrot. That cooked for about 6-7 minutes, then I added a 14oz can of diced tomatoes and two cups of chicken stock. Once that was all mixed together I grated three more garlic cloves and tossed them in along with some salt, pepper, and about a tablespoon of cumin and a teaspoon of cayenne. I let that simmer for about 10 minutes covered over med-low heat.

After that I turned on the broiler and drizzled olive oil on the red pepper slices and yellow string beans. I seasoned them and threw them under the broiler. I left them there for about 10-15 minutes, during which time I finished the baba ghanoush.

I peeled the skin off the eggplants and mashed them up real good with a fork. I added 2 cloves of grated garlic, about 8 tablespoons of tahini, the juice from 1 lemon, and about a half teaspoon of cumin.

Then I heated some oil in a pan and cooked the kofta. I left them on for about 6 minutes each side, that gave them a nice crust, but kept them juicy. I also added about a cup of Israeli couscous to the tomato soup at this point to let it cook while the kofta was going.

Once everything was done I added a handful of chopped cilantro to the soup and plated it all up. The leftovers made a fantastic pita sandwich for lunch today!
