We had picked up some squid the other day, about a pound, that needed to be eaten before it went bad. I had always wanted to try stuffing squid and this seemed to be the perfect opportunity. Always the opportunist I went with it.

First thing I did was make the stuffing. I picked up about a half pound of ground pork, a quarter onion diced, and minced 3 garlic cloves.

I sautéed the onion and garlic in about 2 tablespoons of olive oil for about 7 minutes and then added in the pork. Once the pork was fully cooked, about 5 more minutes, I seasoned with salt and pepper and then let it sit for a couple of hours to cool down to room temperature.

After getting some work done on my computer while the stuffing was cooling down I got the spaghetti sauce ready. I used a half bulb of fennel (fronds saved for garnish), a carrot diced, 3 cloves of garlic minced, a quarter onion diced, 1 can of diced tomatoes, and a quarter cup of chicken stock.

In my hot pan I poured in about 3 tablespoons of olive oil and then sautéed the garlic, onion, carrot, and fennel for about 10 minutes over medium-high heat. Then I poured in the chicken stock and let it boil down for about 5 minutes before adding the tomatoes. I seasoned with salt and pepper and gave it a taste. I saw the need for a little more flavor depth so I poured in about 5 to 6 tablespoons of balsamic vinegar.

Here are my little squid. I threw the tentacles into the spaghetti sauce.

I started stuffing the bodies with the pork mixture. That was not an easy task. None of my regular spoons were small enough to fit into the squid, my utensil is too big (I wish)! So, I tried using one of Otis’ feeding spoons. That was too big too, but did get some pork stuffed in. I ended up just using my fingers, still a difficult task as the squid kept slipping out of my hand. Slippery little suckers.

After I got ten of the squid stuffed I realized that I was short on time and had to go pick Otis up from daycare. Since I only needed three and a half servings (dinner for all three of us and lunch for Yuki) I thought that 10 was enough. So I cut the rest of the squid into rings and tossed it into the spaghetti sauce along with the rest of the pork mixture.

To get some green into dinner I took a big handful of haricots vert and roasted them with olive oil, salt, and pepper at 375 degrees for about 15 minutes or so.

While my noodles were cooking (I really wanted black squid ink pasta, but couldn’t find any so I used spinach spaghetti and just boiled it according to package instructions) and sauce re-heating I heated up my griddle pan to med-high, salted and peppered my squid, drizzled a little olive oil on the pan, and cooked the squid for about 4 minutes per side.

I will say, this dish was a success. It was a bit time-consuming trying to stuff those little sea aliens, but well worth it. They were soft, juicy, and very tasty. I would definitely make this, or something like it again. Actually, next time I think I’ll do a togarashi spiced squid and serve it with Japanese noodles in a dashi broth. The possibilities are endless!

I know I haven’t blogged in a while, but for all of my faithful reader (I know there’s just one of you), here’s what I made for Thanksgiving last night. We decided to stay home and just have a quiet dinner and I didn’t want to just roast a turkey breast, so I did something a little different. I made Turkey Paillard. Now, I did have to include a couple of the traditional (I say traditional, yet turkey wasn’t even served at the first Thanksgiving meal) ingredients on the plate being sweet potatoes and cranberries. Otherwise, I kept it pretty simple.

The first thing I did was make the stuffing for the paillard. I used about 3oz of baby spinach, 3.5oz of shimeji mushrooms, 3oz of oyster mushrooms, about 1/4 onion diced, 3oz of goat cheese, and three cloves of garlic minced (didn’t make it in the photo).

In my hot pan I poured in a couple of tablespoons of peanut oil and sweat down the onion and garlic for about 7 minutes. Then, I tossed in the mushrooms. Once the mushrooms were in I decided to add a sprig each of rosemary and thyme to add some depth to the flavor. As the shrooms were softening, I decided that some butter would be a good idea, which it was. I added a tablespoon and then seasoned with salt and pepper. When the shrooms were soft, about 5 minutes or so of cooking with the butter, I added the spinach and cooked that down just until it wilted, about 2 minutes. I removed the rosemary and thyme and then let the mixture cool down.

For the turkey I used 1 cup of chicken stock, some rosemary, thyme, and a 1lb turkey tenderloin that I butterflied open.

I opened up the turkey and spread the mushroom and spinach mixture all over the inside, leaving about a half-inch border around the edges. Then I put chunks of the goat cheese all over that.

I rolled it all up and tied it with some kitchen twine, then seasoned it all over with salt and pepper. I will say this, it may be the ugliest rolled piece of fowl in the history of Thanksgiving. However, it was so ugly that it had to taste good! I simply put too much stuffing in, but hey, it’s Thanksgiving, you’re supposed to be glutinous.

I heated up my pan, poured in a few tablespoons of olive oil, and gently placed the turkey in. Had I done a better job tying the turkey I would have turned it so that the outside seared all over. I didn’t want it to fall apart though, so I just poured in the chicken stock and tossed the herbs on top. Once the stock was boiling I turned the heat down to low, covered the pan, and let it simmer for about 30 minutes.

While the turkey was cooking I whipped up my two sides. One was a simple pureed sweet potato. I simply steamed two sweet potatoes cut up in cubes for about 15 minutes and then blended them in my little hand blender with a few spoonfuls of the turkey’s cooking liquid.

The other side was pan roasted haricots vert with onion and dried cranberries.  I used a handful of haricots vert, about 1/4 onion thinly sliced, and a handful of dried cranberries.

I heated up my saute pan over med-high heat and poured in a couple of tablespoons of olive oil and then added the haricot vert and onion. I let them cook for about 10 minutes until the onion became slightly carmelized and then added the cranberries along with some salt and pepper. A few more minutes and this dish was ready.

When the turkey was done I set it aside and tented it with foil. I took 2 tablespoons of butter cut into smaller pats and added them one at a time to the chicken stock that the turkey cooked in with the heat turned up high. Well, first I removed the rosemary and thyme sprigs. As the sauce reduced a little more I added more butter until I had a nice, silky gravy to spoon over the turkey.

That was all. A very simple Thanksgiving dinner for two. It didn’t take a ton of time to cook, I didn’t have a ton of clean-up afterwords, and it was much better than a regular old roasted bird. In fact, Yuki even commented that this was the best tasting turkey she’s ever eaten. I noticed that she didn’t say the best looking.

Sorry to all of my loyal readers (all 3 of you) for not posting anything in a while. Been pretty busy with life and life itself. Yesterday was by birthday however, so Yuki and Otis took me out for dinner. Tired of overpaying for mediocre celebrity-chef meals I wanted to go somewhere more casual and Otis-friendly. Also, now that we’re in the South Loop I wanted somewhere close. So, Tapas Valencia it was.

We’ve actually been there once before a long time ago. We joined a couple of friends for their happy hour tapas specials before heading down to Hyde Park to watch the movie, “Food, Inc.”. I remember it being very good and had a taste for bacon-wrapped dates. It all made perfect sense to head there last night.

Without further ado, here’s what was on our dinner table.

First up was the Calamares A La Plancha. The squid was perfectly cooked…soft and tender, yet crispy at the same time. A little too much salt, but not so much that it killed the dish.

Next we had the Jamon con Melon. You really can’t beat quality Serrano Ham on top of ripe, sweet, juicy cantaloupe. With cantaloupe at it’s finest about now we couldn’t pass on this one. Served with a simple cucumber and tomato relish this was tapas at it’s finest.

Then we had the Pado Confitado, duck confit with apples and mushrooms. Fall-apart duck leg, apples, and mushrooms…need I say more?

I can’t remember the name of this dish in Spanish, it was a special on the menu. Short rib braised in Rioja and then served with garlic and rosemary Israeli Couscous and spinach. While this dish was missing one note, something slightly acidic like tomato or even a small squirt of orange or lemon, this could’ve been an entrée unto itself.

Finally, our last tapas (or is it tapa?), the Datiles Con Tocino. Crisp bacon around sweet dates smothered in a roasted red pepper sauce, that’s where it’s at! A true crowd-pleaser if there ever was one.

While I did say that was our last tapas, it wasn’t our last dish. We also split an order of the Paella Valenciana. Paella with mussels, clams, shrimp, and chicken. This was huge! I’m glad we only got one order. I will say that my paella is a little better, but this was a very delicious paella, it just didn’t have that crisp burnt rice on the bottom that I love. I wasn’t dissatisfied at all though.

For dessert we split the flan of the day, coconut. Not too rich or sweet, this one was just right. I don’t think coconut is typical in Spain, but coconut almost always makes a great flan. This is one of the better flan in Chicago.

To drink it all down we forgoed the Sangria and went for a couple of glasses of Clara, which apparently is Spain’s most popular drink right now. It’s Alhambra Beer (a Spanish Lager) with a little lemonade. I was a little skeptical at first, but I will say that it wasn’t bad at all. I mean, you put lime in Corona, why not a little lemonade in Spanish Lager?

The service was great too. Very friendly and attentive. They gave us more of a private table where Otis’s stroller wouldn’t get in the way, and where it’d be a little quieter for him. Food was served and cleared in a timely fashion as well. It was a little slow being a Wednesday night, but this seems to be a very well run restaurant.

All in all, there are probably better Spanish and Tapas joints somewhere, but I haven’t found them yet here in Chicago. The dishes are well prepared, the portions are big, and the quality of ingredients are high. If anything, and I hate to say this, the prices might be a little too low for what you get. But don’t tell Tapas Valencia that.

Alright, so I don’t just cook for Uichiro when he’s here, I also cook for Tamiko. She’s a huge fan of Italian food as well as seafood. That said, I thought a nice pasta with clams would be just the trick. With Uichiro back in Japan already, this dish would also make him a little jealous since he’s probably eating a take-home bento box right now. Sorry Uichiro.

I wanted to get all of the sand and grit out of the clams so the first thing I did was purge them. To do that all I did was rinse them real well in cold water and then let them sit in cold salt water with some cornmeal for about 2 hours. What this does is trick them into thinking that the cornmeal is sand so it cycles it through spitting out any real sand in the process. Just before cooking I rinsed them again in fresh cold water. Since I was cooking for 3 I used 15 clams. If there’s one thing I’ve learned from Iris Tsai (Ming’s mom) it’s that 5 is a good number for a plate of food.

One of my side dishes was a simple bruschetta. I prepared that ahead of time so that come dinner all I had to do was toast the bread and top it. I used some fresh basil chopped up, 3 tablespoons of olive oil, 3 tablespoons of grated parmesan, 3 tomatoes diced, 1 garlic clove peeled, 1.5 tablespoons of balsamic vinegar, a some ciabatta.

In a glass bowl I whisked together the olive oil, balsamic vinegar, and parmesan along with some salt and pepper until it was emulsified. Then I added the tomatoes and basil and mixed it thoroughly. I wrapped it up and put it in the fridge until dinner time. That way, all I had to do was toast the bread, rub the garlic over the toast, and then top it with the tomato-basil mix.

I also made a simple Italian bean and vegetable soup. I used one carrot cut into half moons, 14oz can of cannellini beans, 1 cup chicken stock, 1/2 onion diced, 1 garlic clove minced, and a large handful of baby spinach.

I threw everything except for the beans into a pot and brought it up to a boil. I covered the pot, turned the heat down to med-low, and let it simmer for about 20 minutes. Then I added the beans and let it simmer for another 3 minutes. Since the beans were canned I had no need to cook them, just heat them through. A little salt and pepper and that’s all she wrote for this one.

My final side dish was simple roast asparagus. I cleaned up 15 spears and drizzled them with olive oil, salt, pepper, and parmesan. They went into a 400 degree oven for about 20 minutes.

Finally, the main event! For the pasta I used 2 tablespoons of chopped parsley, 1/4 cup of white wine, a pinch of red pepper flakes, 3 tablespoons of olive oil, 6oz capellini (I didn’t actually use spaghetti because I already had some capellini open in my cupboard), 1 garlic clove thinly sliced, and my clams.

In a large pot of boiling salt water I cooked the pasta until about 2 minutes before al dente. I reserved a ladle of the pasta water and drained the noodles and set them aside.

While that was going on I heated up my large pan and poured in the olive oil. I added the garlic and let it sautee until it turned a light golden brown, then I added the red pepper flakes. I swirled that all around for about 15 seconds to make sure the flavors mixed into all of the oil. Then I poured in the wine, added the clams, covered the pan, and let the clams cook for about 6 minutes or so until they were all opened up. If any clams don’t open then throw them away, they’re dead. Fortunately, all 15 of these were alive and well…that is until I killed them in my spicy garlicky wine sauce!

Once the clams were open I set them aside in a bowl and poured the reserved pasta water into the pan. Once it came to a boil I added the noodles and let them cook in the wine sauce for about 2 minutes. Then I added the clams back, along with any juices that accumulated in the bottom of the bowl, as well as the parsley. I tossed it all around and then served everything up, Buon Appetito!

Another year means another Passover Seder. Well, that’s not entirely true. Since Yuki is about 2 weeks from her due date we decided that it’s not a good idea to spend the holiday with my family. Being 3 hours from our OB/GYN at this point isn’t the best thing we could do (or at least that’s what we tell my family!). What makes it easier is the fact that I’m not a religious man by any stretch of the imagination. So, if I missed another recital of the 4 questions or the 4 sons or Elijah I wouldn’t lose any sleep. I do, however, love a good matzo ball soup and brisket. I decided that I would make a few of the traditional Passover delicacies for the first night. My younger bro also lives in Chicago and did not go to the Quad Cities, so he came over for dinner last night.

To keep with tradition, I started the dinner off with some matzo ball soup. You can ask Alpana Singh my thoughts on the perfect matzo ball. I made my typical chicken soup on Sunday and then put it in the fridge overnight. In the afternoon I took it out and let it come to room temperature. About 20 minutes before my brother got here I made the matzo balls.

I used 2 eggs, about 3 tablespoons of chopped parsley, 1/2 teaspoon of salt, 1/2 teaspoon of baking powder, 1/2 cup of matzo meal, a few cracks of white pepper, and 1 tablespoon of olive oil.

In a small glass dish I mixed together all of the dry ingredients. In a seperate bowl I beat the eggs with the olive oil and parsley. Then, I poured the egg mixture into the dry mix until it was evenly mixed. I covered it in plastic wrap and let it sit in the fridge for about 15 minutes.

With the soup boiling I took the mix out of the fridge, wet my hands, and dropped walnut-sized balls into the soup. I let them boil for about 20 minutes to make sure they cooked through. That’s all there is to it, soup is ready. I will say that these were by far the best matzo balls I’ve ever made, and some of the best I’ve ever eaten as well.

While the rest of dinner was heating up I brought out some charoset and matzo. Side note, everything we ate was prepared ahead of time so that all I had to do was re-heat for dinner.

For the charoset I used 1 gala apple, 1/3 cup of walnuts, 1 tablespoon of red wine, 2 tablespoons of honey, and a few dashes of cinnamon which didn’t make it into the pic. In a bowl I crushed the walnuts into small chunks then poured the wine and honey in. Then I grated the apple into the bowl, seasoned with the cinnamon, mixed it up real well, covered with plastic, and let it sit in the fridge for at least an hour.

For the entrée I made a horseradish brisket (the recipe was adapted from a Gail Simmons recipe), wilted spinach with raisins and toasted soy nuts, olive oil mashed potatoes, and roasted radishes.

I made the brisket in the morning to make sure it got enough time in the braising liquid. I used 2 cups of beef stock, 1 cup of red wine, 1/2 cup of prepared horseradish, 3 carrots chopped, 3 celery stalks chopped, 7 garlic cloves minced, 1 small onion sliced, and a 3.5 pound brisket.

In a large heated skillet I poured in a couple of tablespoons of vegetable oil and browned the brisket. I gave each side about 7 minutes.

Then I transferred the brisket to a foil braising pan and scattered the carrots and celery around it. In the hot skillet I added half of the garlic and the onions and let them sweat down for about 6 minutes. Then I poured in the wine. I let the wine boil down for about 7 minutes and added the beef stock. When the liquid came back to a boil I poured everything around the brisket.

I mixed together the rest of the garlic with the horseradish and spread that on top of the brisket. I covered it tightly with foil and put it into a 300 degree oven for about 3 hours. The one thing I did forget was bay leaves. I would have liked 2 of them in there. Oh well, still tasted great.

After 3 hours I let it sit for the rest of the day. While we were eating the soup I removed the foil, seasoned with salt and pepper, and put it under the broiler for about 30 minutes or so to not only re-heat, but also to give the horseradish a nice crust. To serve I just lay a couple sliced on top of the onion, carrots, and celery.

For the spinach I used 1/4 cup of raisins, the zest and juice from 1 lemon, 3 garlic cloves minced, 1/2 onion diced, 1/4 cup of toasted soy nuts (this dish would typically use pine nuts, but at $24 a pound I found the soy nuts price of $3 a pound a little easier to digest), 1/4 cup of red wine, and 2 bunches of spinach chopped.

First I poured the wine into a bowl and soaked the raisins for at least 15 minutes. Then, I heated up a large pot and poured in 1 tablespoon of olive oil and sweat down the garlic and onion for about 5 minutes. Handful by handful I added the spinach until it was all wilted down. I poured in the wine and raisins. Once the wine had boiled down for a few minutes I added the lemon juice and zest. I stirred that all in and then added the soy nuts. A touch of salt and pepper and the spinach was ready to go.

I skinned 5 yukon gold potatoes for the mashed potatoes. Since the laws of the Kashrut don’t allow dairy to be eaten alongside meat I decided to use olive oil in order to try to make them creamy. I know, I don’t believe any of that crap, but since I was making a pretty traditional meal I thought I’d keep with tradition (all kosher wine as well). After boiling the potatoes I mashed them with about 1/4 cup or so of olive oil. Actually, I probably used more, I just kept adding it until the potatoes were the right consistancy. A little salt and pepper and they were all set.

For the radishes I simply halved them and roasted them with olive oil, salt, and pepper at 400 degrees for about 25 minutes.

I did not have enough time to make any dessert last night. We were pretty full anyway, but a little dessert is always a nice thing. I guess life could be worse than not having dry, matzo meal cakes sit in your stomach on top of brisket. Plus, you’re all probably tired of this post by now anyway. Happy holidays!

I made this dish last Monday, so I’m a little late putting up here. A couple of our friends had a party for us since we’ll be new parents in a couple of months, and we came home with leftovers. We had some vegetables from the veggie tray as well as some leftover catered Middle Eastern food. Looking in my cupboard I found some lentils and thought a simple stew would go well and help use up the ingredients.

We had brought home some celery and carrots that I diced. I also diced an onion, minced 3 garlic cloves, minced an inch of ginger, chopped up 3 skinless chicken thighs, and got out 1 cup of chicken stock, 1 14oz can of diced tomatoes, and 1 cup of lentils.

I heated up a pot and then added about 2 tablespoons of olive oil. I threw the ginger and garlic in for about 30 seconds, then added the onion, carrots, and celery. I let them sweat down for about 6 minutes and then added the lentils. I wanted the lentils to sort of saute for about 2 or 3 minutes before adding anything else.

Then I poured in the chicken stock. Once it started to boil I added the can of tomatoes and seasoned with salt and pepper. I noticed that I had a big sprig of rosemary, so I tossed that in as well. Once everything started to boil again I added the chicken. I let it come to a slow boil, covered the pot, and turned the heat to med-low. I let it stew for about 15 minutes.

I realized that I had some spinach in the fridge, so I chopped up a large handful, threw that into the stew, and let it go for another 10-15 minutes.

I served the stew with leftover hummus with pita and some Jerusalem Salad which consisted of chopped cucumber and red bell pepper with a parsley and lemon vinaigrette. I added some red leaf lettuce. The sides were all from Salam.

After a couple of nights eating out for Restaurant Week I decided to give our stomachs, as well as our wallets, a little bit of a break. Simple, cheap, and delicious, I made a stew with cod and vegetables. Warm stews like this are great for cold winter nights and are packed full of nutrients that won’t bulge your belly or bank account.

I started off with my typical dashi. I boiled 1/3 cup of dried anchovies in 3 cups of water for about 30 minutes and then strained out the fish. I really love making this dashi because it’s easy, healthy, and delicious.

The rest of my ingredients included 2 carrots chopped, 1/2 head of cauliflower broken into florets, 1 head of broccoli broken into florets with the stem chopped, 5 large fingerling potatoes chopped, 1 onion large diced, 3 garlic cloves large diced, 5 ounces of spinach rinsed, 3/4 pound of cod cut into bite-sized pieces, 3 tablespoons of soy sauce, and 2 tablespoons of sake.

I heated up a stock pot and poured in about 2 tablespoons of olive oil. Once the oil was hot and shimmering I added the onion, carrot, and garlic. I let that all sweat down for about 3 minutes and then added the broccoli and cauliflower. About 2 minutes later I poured in the dashi, soy, sake, and a bay leaf and brought that up to a boil. Once boiling I added the potatoes and turned the heat down to med-low so that it could simmer for about 10 minutes. Then I added the fish and let it simmer for another 10 minutes before throwing the spinach in. Once the spinach was in I seasoned with pepper (no need for salt because of the soy in the broth), covered the pot, and let simmer for another 10 minutes. After that all I did was adjust the seasoning and serve it up with some white rice.

Just be gentle stirring after you add the fish, cod will flake apart.
