Mapo tofu is a Szechuan dish typically made with ground pork. However, last night being Meatless Monday, I diced up some shiitake mushrooms to take the place of the meat.

To start, I made the sauce. I used 2 heaping tablespoons of toban djan (a szechuan chili and fermented bean sauce, its spicy but this dish is supposed to be very hot), 1/4 cup of soy sauce, 1/8 cup of sake, and 2 teaspoons of tapioca flour to thicken it up a bit. I mixed it all together and set it aside.

I used a 3.5 oz package of shiitake, about 6 oz of haricots vert cut into thirds, a carrot cut into matchsticks about 2 inches long, 8 green onions chopped into 1 inch pieces, 3 minced garlic cloves, 2 tablespoons minced ginger, 1 red bell pepper cut into thin slices and then halved, and 1 package of firm tofu. I prefer silken tofu, but there wasn’t any at the store. Oh well, what can you do? I pressed the water out of the tofu for an hour in the fridge and then diced it.

In a hot pan I poured in about 2 tablespoons of sesame oil and then fried the garlic and ginger for about a minute. Then I added the haricots vert. About 3 minutes later I tossed in the carrot and pepper. I let that go for about 3 more minutes and then the shiitake and green onions went in. Once the shiitake were softened a bit, about 3 or 4 minutes, I poured in the sauce (I mixed the sauce thoroughly again to make sure the tapioca didn’t form any clumps). This was the first time I’ve ever used tapioca flour as a thickening agent and it worked a little better than I expected. The sauce almost immediately thickened up on me in that hot pan. To remedy that I poured in about 1/3 cup of water and that thinned it out nicely. I needed it a little thinner so it would evenly coat the tofu which went in right after I stirred the water in. I let the tofu heat through for about 4 minutes over medium heat and then served it all up with some white rice and drank it down with a cold beer.

Meatless Monday last night ended up being Yakisoba. Yakisoba is a traditional noodle dish (even though it’s origins are from China, it has become a staple of Japanese cuisine much like Ramen) that is typically served with various vegetables and pork. I omitted the pork to accommodate Meatless Monday.

First thing I did was get the protein ready. I made a thin omelet of two eggs and a little cream. In my heated large skillet I poured a tablespoon each of soy oil and sesame oil. I swirled that around to coat the entire pan and then poured in the scrambled eggs. I swirled the eggs around to make a thin omelet, much like a crepe in appearance. I turned the heat down so it wouldn’t burn. Once the bottom was cooked and the top set I carefully flipped it over to get a little crust on both sides. Then I slid it out of the pan and onto a cutting board, cut it in half, then made thin “noodles” out of it. I set this aside because this was my garnish.

For my vegetables I used 6 green onions, 1 carrot, some haricots vert, 6 ounces of bean sprouts, 1 red bell pepper, 6 cremini mushrooms (I wanted to use shiitake, but I had cremini in my fridge already), some ginger and a few cloves of garlic. I sliced everything thinly so that they would mix in well with the noodles.

The noodles I used are called Chuka Soba, which translates to Chinese Noodles. They’re wheat noodles, but honestly, you could use a chow mein or ramen noodle if you wanted and get the same results. I cooked the noodles according to package instructions.

Using the same skillet I used for the egg I heated another tablespoon each of soy and sesame oils. I threw the garlic and ginger in for about a minute and then added the haricots vert, carrot, bell pepper, and green onions. I let those cook for about 6 minutes before adding the mushrooms. I let the mushrooms cook for about 4 minutes and then seasoned with a little salt and pepper. Then I poured in about 2 tablespoons of sake and let that boil off. After that I added the sprouts and then about 1/3 cup of Bull-Dog Sauce. I don’t know if you can get Bull-Dog Sauce at many places. We get ours at Mitsuwa, but you may be able to find it in ChinaTown or some other Asian Grocers.  

Once the sauce was mixed in well with the vegetables I tossed the noodles in and let them fry a little while mixing everything together. It’s important to keep the heat on to dry the sauce up a little while the noodles absorb it. This gives a nice texture to the noodles.

To serve I simply used my tongs and put a big pile of everything on a plate. Then I topped it with some of the sliced eggs and drank a cold beer. For the leftovers today I sliced some Black Forest Ham and added it to the mix. Since it’s not Meatless Tuesday I’m cool with that.

Last night was the final performance of Millenium Park’s world music series. They had two different accordion players, and I have to say, that is one bad ass instrument! Now I need to work on my air accordion skills. It’s a lot of fun packing a picnic and hanging out at the park for free music (I say free, but let’s be honest, we already paid for it with our tax dollars). At any rate, I had to make a dinner that would taste good cold. I thought that poached salmon on corn salad would do the trick. As usual, I was right.

The first thing I did was roast some cherry tomatoes. I simply drizzled them with olive oil and then put them in a 375 degree oven for about 20 minutes. I set them aside to cool down before packing it all up.

For the corn salad I used two medium-sized zucchini, one red bell pepper, and three ears of corn. I grated the zucchini into a mesh sieve, sprinkled a little salt on it, and let the juices drain for about 20 minutes. Then I squeezed it as dry as I could and set it aside for cooking. For the bell pepper, I just diced it up.

After cleaning all of the silk off the corn I separated the kernels from the ears. This can be a little messy as kernels have been known to fly around the kitchen as you slice them off, in my kitchen at least. I find the easiest way to do this is to cut the ears in half first. Then, I take my cutting board and lay it over a large baking dish. This way, when I slice the kernels off they fall right into the baking dish instead of all over my counter and floor.

Save the cleaned ears, they have tons of flavorful juice in them. I used these to help flavor the poaching liquid for the salmon.

To make the salad I first sautéed about three tablespoons of diced shallots in some olive oil for about 5 minutes. Then I poured in 1/4 cup of white wine (I used the same White Burgundy that I planned on drinking with dinner) and let that boil away for about 3 minutes. Once the wine was boiled off I dumped in the corn, bell pepper, and 1/2 cup of water. I covered the skillet and let it go until the corn was softened a little, about 5 more minutes. After that I seasoned with salt and pepper and then threw in the zucchini. I stirred it all around to separate the zucchini (it will become a zucchini ball when squeezing out the liquid), let it cook for another 5 minutes, then turned off the heat and moved on to the salmon while it cooled down.

I picked up about 24 oz’s of really nice wild caught salmon, center cut so that it was uniform in thickness. I had the fishmonger skin it for me. Fishmongers have better knives for that job than I do, plus I didn’t want my garbage can to stink like rotting fish. It’s always a good idea to let the fishmonger skin and gut for you. I cut the salmon into 4 equal filets. Before putting the salmon in the poaching liquid I lightly seasoned it with salt.

For the poaching liquid I used 1 cup of the white wine, 1/4 cup of soy sauce, 3 cups of water, 1 bay leaf, about 2 tablespoons of diced shallot, and the naked corn cobs. I brought that all up to a boil and let it go for about 5 minutes or so to let all of the corn juice mix into the liquid.

Once the corn juice was incorporated I took the cobs out, gently laid the salmon in, and turned the heat down so that the liquid was at a simmer instead of a vigorous boil. It should only take about 6 or 7 minutes for the salmon to cook all the way through.

After I took the salmon out I seasoned it lightly with salt again, and a little pepper. Then I drizzled just a little olive oil on top.

I got out my little Rubbermaid TakeAlongs and scooped a bunch of the corn salad in, topped it with a piece of salmon, laid in a few of the tomatoes, and garnished with some cilantro. I also brought some dinner rolls along. It was absolutely delicious! It also would have been tasty if I served it hot right off the stove top.

The only thing I did wrong was a miscalculation on the amount of corn salad. When I cook dinner during the week I try to make 4 portions so that Yuki and I have lunch for the next day as well. I came up one portion short on the corn. So, if you try this recipe and want 4 portions use 3 zucchini and 4 ears of corn. That should do the trick.

Monkfish, quite possibly natures ugliest creation (not including Ann Coulter’s morality). However, I’m a firm believer that the uglier the animal, the better it tastes. Monkfish is truly one of the best tasting fish in the sea. Called the poor man’s lobster because of a similar stringy texture it is a much more affordable way to go than lobster. Hence, the name. One thing to keep in mind with monkfish, the tail is covered in a membrane that needs to be removed prior to cooking and eating. It’s easy to do, all you need is a sharp knife. However, let the fishmonger do it for you so your garbage doesn’t stink like rotten fish the next day.

The first thing I did was make the sauce. I took two red bell peppers and grilled them (I guess it’s technically not a roasted red pepper sauce) until the skin was nice and charred. I kept turning them around to make sure the entire pepper got charred. You can do this under a broiler or on the gas stove top if you don’t have a grill. The grill does add a nice smokey element to the peppers though that you don’t get on a range.

Once the skin was good to go I put them in a bowl and covered them in plastic wrap. I let them cool down in their own steam for about a half an hour. This not only allows the peppers to cool down for easier handling, but it helps the skin separate from the flesh. Then, keeping the peppers over the bowl, I rubbed off the skin and discarded it along with the stem. I opened them up and removed the seeds as well. I kept them over the bowl to catch the flavorful juices. Once the flesh was clear of seeds I put them in my small blender and pureed them along with the juice from the bowl.

In a small saucepan I melted 1/2 tablespoon of butter over high heat and poured in about 1/3 cup of white wine. I let that boil until it reduced by half, approx 7 or 8 minutes. Then I poured in about 2/3 cup of cream. Once that started to boil I turned the heat down to med-low to keep the cream from boiling over. I let that reduce by half as well, another 10 minutes or so once it started to boil. After it reduced I poured in the red pepper puree and let that come to a boil. Again, I let it reduce by about half, another 10 minutes. Then I turned off the heat, covered the pan, and let it sit until service.

Thinking about vegetables that go well with red peppers I decided to use a zucchini, two baby eggplants, and an onion. I also cut some rosemary from my backyard and cut up a couple of garlic cloves.

I chopped up the vegetables and tossed them with olive oil and the rosemary in a roasting pan. In a 400 degree oven I let them cook for about 20 minutes. Then, I took them out and added the garlic. I didn’t want to garlic to burn which is why I didn’t include it to start with. I also seasoned with salt and pepper at this point and put everything back into the oven for another 10 minutes.

Then, I took it out again. I had cut the monkfish into 4 portions. I seasoned it with salt, pepper, and some paprika. The seasoned fish was laid on top of the veggies and then everything went back into the oven for another 15 minutes.

To serve, I put some white rice on the plate, scooped some of the veggies next to the rice, and laid a piece of fish on top of the veggies. I had re-heated the red pepper sauce and spooned it all over the fish and veggies. Delicious!

Last night I was back at it with Meatless Monday. I haven’t used tofu in a while so I decided to make a dish with it. I treated it like a piece of fish or chicken and cooked it en papillote with some vegetables. Well, that’s not entirely accurate. I used foil instead of parchment paper. Same cooking method though.

I had some baby bok chow in the fridge, so I finished that up by separating it into individual leaves. I sliced half of an onion, a small red bell pepper, and halved some shiitake mushrooms. I picked up a block of firm tofu, I prefer silken because of its silky texture but they didn’t have any. Any kind of tofu works. I pressed the water out of it for about an hour in the fridge then cut it into 4 equal “steaks” before cooking. I also picked up some yellow string beans.

On a square of aluminum foil I first laid down a couple of bok choy leaves. On top of that some onions and then a tofu steak. I scattered some pepper slices, yellow beans, shiitake, and more onions on top and around the tofu. Then I put a couple small pats of butter on top with 1.5 teaspoons of soy sauce and 1 teaspoon of sake. A little bit of black pepper and my packet was ready to be sealed. I make 4 packets. I wanted to make sure that the foil was completely sealed so that the vegetables would steam inside and not lose any good juice.

I threw them into an oven at 425 degrees and let them cook for about 20-25 minutes. They were opened at the dinner table to keep the steam in. I used chopsticks to open mine so that I wouldn’t burn myself with the steam.

For the tomato and bread soup I used 6 Roma tomatoes, two cloves of garlic, three dinner rolls, and some fresh basil from my balcony. I started by skinning the tomatoes in hot water. Just make a small “x” with a sharp knife on the bottom of each tomato and drop them all into boiling water for about 15 seconds. The skin will come loose and you can easily peel it off. Then I chopped the tomatoes into half-inch square pieces. I also chopped up the rolls about the same size. The garlic was minced and the basil chopped.

In a hot pan I poured about a quarter cup of olive oil and threw the garlic and basil in for about a minute. Then I added the bread and let it go for another few minutes.

Then I added the tomatoes and seasoned with some salt. I poured in about a 1.5-2 cups of the water that I used to skin the tomatoes. Once that came to a boil I lowered the heat to medium, covered the pot, and let it simmer for about 20 minutes. That’s it, just check for seasoning and serve, along with white rice.

So, last night’s Meatless Monday was an absolute disaster. I have no desire to fill you in on what I made. I’m just damn glad it wasn’t in front of my brother-in-law like last week cause I’d never hear the end of it. I still get shit for a failed attempt at Nudi Ravioli from he and my sister. Instead of writing about last night’s mess I want to tell you about a successful vegetarian endeavour from a few weeks ago.

Yuki and I were invited to a pot-luck, so I decided to make these baked vegetables in golden crust. It was cheap, simple, and absolutely delicious!

To start, I poured 4-5 tablespoons of olive oil on a rimmed baking sheet and threw it in a 425 degree oven. I just wanted to get the oil hot to help give the veggies a better sear instead of them soaking up cold oil. Once the oil was hot, about 10 minutes or so in the oven, I added some sliced eggplant, zucchini, red bell pepper, yellow bell pepper, and red onion. I coated them in the hot oil and put back in the oven for about 20 minutes.

Meanwhile, in a large bowl, I made the batter. I beat an egg and then gradually beat in 1 cup of flour. Then I beat in a quarter cup of soy milk to make a smooth, thick paste. After that I stirred in another full cup of soy milk, some rosemary, salt, and pepper.

After the 20 minutes were up I took the vegetables out of the oven and quickly poured the batter all over to cover the pan. Much like a Yorkshire Pudding, you need to pour the batter into really hot oil for it to puff up and be light. I put it back in the oven for another 30 minutes until crust was nice and golden and the vegetables were nicely roasted.

When we got to the party I garnished it with some fresh grated parmesan cheese and some fresh rosemary. Cut it up into squares and you have a great party dish. I think it would also go well next to some roasted chicken.

Last night I made the dinner that my brother-in-law probably would have preferred over Meatless Monday, I grilled up some skirt steak!

I got a steak that weighed about 1.3 lbs. For it to fit in my largest dish to marinate, I had to cut it into thirds. I marinated it in a mix of 6 tbls of soy sauce, 4 tbls of sake, 2 tbls of mirin, 1 tbls of sesame oil, 5 minced garlic cloves, a bunch of chopped cilantro, black pepper, and nanami togarashi. I wrapped it and let it sit in the fridge for about an hour. I took it out about 30 minutes before grilling to bring it up to room temperature.

For vegetables I found these great little sweet onions at Stanleys. I halved them and set them on the upper rack of the grill so that they’d get real sweet but not burned. They also had some great little purple potatoes. I quartered them, drizzled them with olive oil, threw some salt and pepper on, then grilled them as well. They get a nice crisp skin and get real soft inside. I love grilled potatoes! I also cut a couple of red bell peppers into disks. I waited until everything was about 10 minutes from being finished on the grill. Since they were pretty thin, I didn’t want them to burn.

I served everything with some sliced avocado and halved cherry tomatoes. Some cilantro garnish, a beer, and we were set! Yuki had to have some white rice too, she has white rice with everything.
