Monkfish, quite possibly natures ugliest creation (not including Ann Coulter’s morality). However, I’m a firm believer that the uglier the animal, the better it tastes. Monkfish is truly one of the best tasting fish in the sea. Called the poor man’s lobster because of a similar stringy texture it is a much more affordable way to go than lobster. Hence, the name. One thing to keep in mind with monkfish, the tail is covered in a membrane that needs to be removed prior to cooking and eating. It’s easy to do, all you need is a sharp knife. However, let the fishmonger do it for you so your garbage doesn’t stink like rotten fish the next day.

The first thing I did was make the sauce. I took two red bell peppers and grilled them (I guess it’s technically not a roasted red pepper sauce) until the skin was nice and charred. I kept turning them around to make sure the entire pepper got charred. You can do this under a broiler or on the gas stove top if you don’t have a grill. The grill does add a nice smokey element to the peppers though that you don’t get on a range.

Once the skin was good to go I put them in a bowl and covered them in plastic wrap. I let them cool down in their own steam for about a half an hour. This not only allows the peppers to cool down for easier handling, but it helps the skin separate from the flesh. Then, keeping the peppers over the bowl, I rubbed off the skin and discarded it along with the stem. I opened them up and removed the seeds as well. I kept them over the bowl to catch the flavorful juices. Once the flesh was clear of seeds I put them in my small blender and pureed them along with the juice from the bowl.

In a small saucepan I melted 1/2 tablespoon of butter over high heat and poured in about 1/3 cup of white wine. I let that boil until it reduced by half, approx 7 or 8 minutes. Then I poured in about 2/3 cup of cream. Once that started to boil I turned the heat down to med-low to keep the cream from boiling over. I let that reduce by half as well, another 10 minutes or so once it started to boil. After it reduced I poured in the red pepper puree and let that come to a boil. Again, I let it reduce by about half, another 10 minutes. Then I turned off the heat, covered the pan, and let it sit until service.

Thinking about vegetables that go well with red peppers I decided to use a zucchini, two baby eggplants, and an onion. I also cut some rosemary from my backyard and cut up a couple of garlic cloves.

I chopped up the vegetables and tossed them with olive oil and the rosemary in a roasting pan. In a 400 degree oven I let them cook for about 20 minutes. Then, I took them out and added the garlic. I didn’t want to garlic to burn which is why I didn’t include it to start with. I also seasoned with salt and pepper at this point and put everything back into the oven for another 10 minutes.

Then, I took it out again. I had cut the monkfish into 4 portions. I seasoned it with salt, pepper, and some paprika. The seasoned fish was laid on top of the veggies and then everything went back into the oven for another 15 minutes.

To serve, I put some white rice on the plate, scooped some of the veggies next to the rice, and laid a piece of fish on top of the veggies. I had re-heated the red pepper sauce and spooned it all over the fish and veggies. Delicious!

Whole Foods had some really nice baby back ribs on sale the other day, so I really had no choice but to get a slab. I only wish I had a smoker, but even without one ribs can be done with flavor and tenderness.

I started by coating the slab with a spice rub. I used a very basic mix for this slab. I mixed together about 1/8 cup of paprika, 1/8 cup of sugar, 2 tablespoons of black pepper, 2 tablespoons of salt, and 1 teaspoon each of cayenne, dry mustard, and white pepper. I let the rub sit for about an hour before throwing the slab into a 250 degree oven. I let it go for about 2.5 hours.

Once the meat was cooked through and tender I put it on the grill over about medium heat. I had some BBQ sauce in my fridge that I needed to use so I didn’t make any of my own. I brushed the sauce on both sides of the ribs and let them cook for about 10 minutes per side to get the sauce nice and carmelized.

Besides white rice I stewed some chickpeas. I diced half of an onion, one yellow bell pepper, two tomatoes, and two garlic cloves. I also used one can of chickpeas and two sprigs of rosemary from our herb garden.

In some hot olive oil I sautéed the garlic for about 30 seconds before adding the onion. A few minutes later I added the yellow pepper and the rosemary sprigs. I let that go for about 7 minutes before adding the chickpeas and tomato. I poured in about a quarter cup of water and then seasoned with salt, pepper, a dash of cumin and a dash of paprika. I let the water come to a quick boil then covered the pot, turned the heat to low, and let it simmer for about 15 minutes. Once the chickpeas were fully heated I turned off the heat and squeezed in the juice from a half a lemon. That’s all, ready for consumption.

Alright, back in the kitchen. The one thing about traveling in the Grand Circle area is the lack of quality Asian food. We did find one really good Thai place near Zion Canyon, but Yuki was craving Japanese flavors and simple white rice. So, being the absolutely wonderful husband that I am, I made some chicken teriyaki with vegetables and white rice.

First thing I had to do was make the teriyaki sauce. In a small sauce pan I put in 1 tablespoon of sugar with 7 tablespoons each of soy sauce, mirin, and sake. I also added a few fresh rosemary needles just to add one more element. I let that come to a slow boil for just a few minutes until the sugar was dissolved. Then I set it aside and let it cool to room temperature.

Once the sauce was cooled I marinated some bone-in skin-on chicken breasts in it for about an hour at room temperature.

Then I cut up all the vegetables. Half of a sweet onion was sliced, one carrot into matchsticks, 7 good-sized shiitake mushrooms sliced, a handful of green beans cut in half, and half of a small napa cabbage head sliced.

I turned the oven on to 400 degrees. I took my baking pan and lined it with foil and then laid a rack inside it. I laid the chicken thighs on the rack, sprinkled them with some pepper and a few rosemary needles, and threw them in the oven. I strained the reserved marinade back into the small sauce pan and boiled it for about 15 minutes until it reduced into a BBQ sauce consistency. Then I took the chicken out and glazed it with the thickened teriyaki and threw it back into the over for another 15 minutes.

While the sauce reduced I sautéed the vegetables. I started by throwing a couple of diced garlic cloves into some hot olive oil. After a minute I added the onion. A few minutes later the carrot. Then I added the green beans followed by the shiitake. I let it all come together for about 5 minutes and then seasoned with very little salt, some pepper, and about 2 tablespoons of soy sauce. I covered the pot and turned the heat way down to low. The vegetables at this point were mostly cooked, I just wanted them to finish off by steaming a little in the soy sauce.

I steamed the napa cabbage. That only takes about 4-5 minutes, so I waited until the chicken was just about done.

That’s it. A pretty simple meal to make but full of flavor and very healthy.

So, last night’s Meatless Monday was an absolute disaster. I have no desire to fill you in on what I made. I’m just damn glad it wasn’t in front of my brother-in-law like last week cause I’d never hear the end of it. I still get shit for a failed attempt at Nudi Ravioli from he and my sister. Instead of writing about last night’s mess I want to tell you about a successful vegetarian endeavour from a few weeks ago.

Yuki and I were invited to a pot-luck, so I decided to make these baked vegetables in golden crust. It was cheap, simple, and absolutely delicious!

To start, I poured 4-5 tablespoons of olive oil on a rimmed baking sheet and threw it in a 425 degree oven. I just wanted to get the oil hot to help give the veggies a better sear instead of them soaking up cold oil. Once the oil was hot, about 10 minutes or so in the oven, I added some sliced eggplant, zucchini, red bell pepper, yellow bell pepper, and red onion. I coated them in the hot oil and put back in the oven for about 20 minutes.

Meanwhile, in a large bowl, I made the batter. I beat an egg and then gradually beat in 1 cup of flour. Then I beat in a quarter cup of soy milk to make a smooth, thick paste. After that I stirred in another full cup of soy milk, some rosemary, salt, and pepper.

After the 20 minutes were up I took the vegetables out of the oven and quickly poured the batter all over to cover the pan. Much like a Yorkshire Pudding, you need to pour the batter into really hot oil for it to puff up and be light. I put it back in the oven for another 30 minutes until crust was nice and golden and the vegetables were nicely roasted.

When we got to the party I garnished it with some fresh grated parmesan cheese and some fresh rosemary. Cut it up into squares and you have a great party dish. I think it would also go well next to some roasted chicken.

Grilling season is here people! Nothing could make me happier. Well, I guess that’s not entirely true, but it does bring a smile to my belly. To kick off the year’s grilling I picked up a beautiful 1.5 pound skirt steak, easily one of the best cuts of any carcass.

To start off I marinated the skirt in a mix of 5 tablespoons of soy sauce, 3 tablespoons of sake, 2 tablespoons of mirin, 5 chopped garlic cloves, an inch of chopped ginger, 1 teaspoon of cayenne, 1/2 teaspoon of turmeric, black pepper, and some whole sprigs of rosemary. The steak was too long for my biggest dish, so I cut it in half and marinated covered in the fridge for about 4 hours, turning every hour or so.

I skewered some cherry tomatoes, cut the yellow pepper that I had left in my fridge, and cleaned some green onions. Stanley’s had real thick green onions that were just screaming to be grilled. when you leave the thicker outer layer on and then grill them as is, the inside becomes real soft and sweet. You can just put the whole thing in your mouth and squeeze out the innards with your teeth as you pull the onion out. So delicious!

While everything was on the grill I sautéed some cannellini beans with garlic and spinach. I started with some olive oil and chopped garlic. A few minutes later I added the left-over marinade from the steak and let that boil for a couple of minutes. Then I tossed in a drained can of beans. Once they were heated through I added a bunch of spinach. I stirred it all around until the spinach had just wilted and most of the liquid had evaporated. Then I took it off the heat and covered it until the grill was ready.

Once the grill was ready I let the steak rest for about 8 minutes while I plated everything else. Then I sliced the steak with the grains, put them on the plates, and we ate. I also served some white rice.

Alright, another Meatless Monday in the books. Yesterday I made Moussaka for dinner. Traditionally made with lamb, I omitted the meat and made my own version. It was a lengthy process, but the results were delicious!

I sliced an eggplant into about 1/8th inch slices. Then I layered them on a colander and sprinkled some salt all over them. I put a heavy bowl on top and added some weight and let the bitter juices drip out for about a half hour.

While that was going on I simmered about a half cup of green lentils in vegetable stock with a bay leaf for 20 minutes, just before they became tender.

I prepped my other veggies while all of that was going on. One onion sliced, two large portabella caps sliced, two cloves of garlic smashed, two medium potatoes sliced to 1/8th inch, I opened up a 14oz can of chopped tomatoes, and one can of chickpeas.

I rinsed and dried the eggplant slices and drained the lentils. I heated a pot to medium-high and sautéed the onion and garlic in olive oil. During that time I also heated up a large skillet to medium-high. In the skillet I added a little olive oil to coat the surface and added the sliced eggplant in batches until they were all browned, about 3 minutes on each side. Then I did the same with the potato slices adding a little oil as necessary. Once the onions in the pot were soft, about 6 minutes or so, I added the mushrooms for a couple of minutes until they started to give off some of their moisture. Then I added the chopped tomatoes with a couple tablespoons of tomato paste and stirred that in. After that I added the chickpeas and lentils along with a few tablespoons of water and some rosemary and thyme, salt and pepper. I let that simmer for about 10 minutes.

In a baking dish I layered the potato slices to cover the bottom. I removed the herbs from the stew and poured that on top. Then I layered the eggplant slices on top.

Then I beat three eggs with a cup and a quarter of greek yogurt, salt, and pepper. I poured that on top. Finally, I grated a half cup of mozzarella and sprinkled that all over. I threw it in the oven at 350 and baked it for 45 minutes until the top was starting to brown.

I had some buttermilk in my fridge that needed to be used up so I made some biscuits to serve alongside.
