Last night was Yuki’s turn to make dinner. She made one of her specialties, vegetable soup with chicken-stuffed cabbage rolls.

First thing she did was to take a head of cabbage and plunge it into boiling water for a few minutes. She didn’t want to cook the cabbage, just make the leaves pliable for rolling, so they don’t break. Then she pulled apart the leaves and separated them.

For the chicken filling she put some ground thigh meat in a bowl. To that I grated some ginger and garlic and she chopped up some cilantro and put that in as well. She also soaked some hijiki seaweed in warm water for about 20 minutes. Once it was soft, she drained it (reserving the liquid) and tossed that into the meat as well. Some salt and pepper and I mixed it all up.

She laid the cabbage leaves down, one at a time, and I dropped a spoonful-sized ball of the meat mixture in the middle. Then she rolled them up and set aside.

For the broth she added the reserved hijiki water to some chicken stock and brought it to a boil. Then she added some green onions, carrots, broccoli, and the cabbage rolls. The leftover cabbage leaves that weren’t rolled were cut up and thrown into the soup as well. She let it simmer over medium heat for about a half hour or so.

That’s it. Simple, healthy, and delicious. White rice on the side, but bread would work too.

A common dish in our diets is a shiitake burger. When I was at the store cremini mushrooms were on sale for $1.49 per 8oz package as opposed to the normal $4.99. Shiitakes also typically cost about $4.99 per 8oz package. So, I decided to use creminis.

To make the patties I small diced a quarter of a medium-sized onion, two garlic cloves minced, about 5 or 6 oz’s of creminis diced, and about a pound of ground beef. To that, I mixed in a half teaspoon of mirin, 1 teaspoon of sake, 1.5 teaspoons of sake, and one egg all beaten together. I don’t typically like to put egg in my burgers, but I didn’t have any bread crumbs or any bread to make breadcrumbs and I was a little worried that the added liquids would make the meat too loose. Once everything was mixed up I let it rest for about fifteen minutes. Then, I made it into 4 patties and put them in the fridge, covered, until just before grilling time.

I made some soup to serve with the burgers. I put about 3 cups of water in a pan and turned the heat up. I added about 8 chopped green onions, one chopped carrot, the rest of the creminis sliced, and let that all boil for about 7 minutes. Then I added a tablespoon of instant dashi and about a quarter cup of soy sauce. Once that all mixed in I added some sliced aburage and a half block of silken tofu that I diced. I let that simmer a little and then covered it and turned the heat down to keep it warm while I grilled.

I first grilled some broccoli and orange bell pepper slices (both drizzled with olive oil, salt, and pepper) over direct heat on the top rack until the broccoli started to show some grill marks. Then I moved the broccoli to the other side of the grill off the direct heat so that it would continue to cook a little without burning. After the broccoli was moved I put the burgers on the lower rack and grilled them up. By the time the burgers were done on both sides the peppers were nice and roasted and the broccoli nice and al dente.

I served everything with white rice. I also drizzled a little ponzu on top of the burgers to add a little zing to them.

Lamb, the prefered meat in Europe and a fantastic animal to stew up with veggies. With Spring in the air, but still a very chilly breeze shooting through Chicago, I thought that a simple Lamb Stew would be a great dinner. Not to mention I had a nice bottle of Syrah I wanted to drink, a nice match with lamb.

I first sautéed up a small onion that I diced up to medium-sized pieces with a chopped carrot, two stalks of celery chopped, and 4 cloves of minced garlic in some olive oil over medium-high heat. After a few minutes, when the veggies were turning translucent, I added a couple of large diced Yukon Gold potatoes. I didn’t want to add the potatoes too early because they fall apart when stewed for long periods of time. For long stews it’s usually best to use a denser potato like russet. But, I had a couple of Yukons that I needed to use up so I added them late to keep them together.

Only a couple of minutes after adding the potatoes I threw in about a pound of cut-up lamb leg meat. You want about 1 inch cubes. Anything smaller and the meat will get tough. I let the meat cook a little until the outsides were cooked but not the insides. Then I added a bunch of quartered cremini mushrooms and stirred that all around.

Once everything was coated with the olive oil and lamb fat I seasoned with a little salt (not too much), turmeric, cumin, dried basil, and a bay leaf. Then I added about a quarter cup of soy sauce and 2/3 cup of beef stock. Once the liquid came to a boil I put the lid on my pot and turned the heat down to medium. I let everything stew together for about an hour.

Once the stew was about ready I threw in a handful of freshly chopped parsley and turned off the heat. I served it up with some sliced bread. Well, I had it with sliced bread, Yuki had it with white rice. Whatever your pleasure, it’s all good.

Sorry it took me a few days to put up this past week’s Meatless Monday. It’s been a pretty hectic week. Plus, I still have posts from Japan that I need to get up as well as other home cooked meals from both me and my wife. Soon enough my loyal readers (all three of you), soon enough.

At any rate, I had some kabocha that I need to use up so I decided to make a vegetarian stew based around it. It’s real simple to make, much like a pot of chili. It’s one-pot cooking at its tastiest.

I started by sweating some chopped onion in olive oil in a large pot. Then I added some ginger and garlic. After a few more minutes I threw some diced carrot and red pepper. Then I added some diced purple potatoes.  A few more minutes and then I finally added the star of the stew…the kabocha. You don’t want to cut the kabocha too small because it will start to become mushy and melt if you stew small pieces for too long (same with the purple potatoes).

After the kabocha was in there for about 5 minutes I seasoned with salt, pepper, paprika, cinnamon, and a little curry powder. Then I poured in about a quarter cup of orange juice and a half cup of water (I added a little more later because it absorbed and evaporated a little quicker than I anticipated, no worries, you can always add water). Once that all came to a boil I turned the heat down to a simmer, covered, and let stew for an hour.

After the hour was up I threw in some lentils then covered it for another 15 minutes. Then I added a can of drained brown beans. Once the beans were heated through I turned off the heat and threw in a handful of chopped fresh parsley and squeezed a half a lime in.

I was just going to serve it as is with some bread on the side, but Yuki decided it would taste better with angel hair pasta. That sparked an idea. Instead of angel hair we should use udon noodles! The problem with that, though, is that we didn’t have any udon. So, angel hair it was.

The beauty of a stew like this is that you can really do anything you like. Vegetables you want and any seasonings you want. Just make sure the flavors will compliment each other. The only think really missing from this dish was nice, juicy, tender chunks of lamb!

One thing that being unemployed is teaching me is that you don’t have to spend a lot of money in order to eat right. To me, eating right doesn’t mean counting carbs, or taking supplements, or any of that nutritionist crap (I’m a believer in Michael Pollan). There’s nothing wrong with eating animal fat, or bread, or dessert. There is everything wrong with eating too much and eating processed foods brought to you by the Big Food Industry.

At any rate, last night I made some of the best Lasagna you could ever pass through your tracts (and pass it through my tracts I did!). I did it using only fresh, high quality, organic ingredients, and I did it on the cheap.

I don’t buy much at Whole Foods since their prices are sometimes ridiculously high. However, I won’t buy meats from normal chain grocers because they sell meat from sick, hormone and antibiotic pumped animals. In order to save a few shekels The Big Farm Industry feeds livestock unnatural diets causing them to get ill. In turn they need to inject large amounts of antibiotics because the feed is unhealthy to them, not to mention the extremely unsanitary living-quarters. On top of all of that the animals are fed hormones to speed up growth, this causes even more health issues. Basically, if you’re not eating organic naturally fed, humanely raised animals, you’re eating sick animals. Would you eat a moldy tomato? So why eat a moldy cow?

But I digress. I headed over to Whole Foods and got some really nice, fresh ground chicken thigh meat. I opted for chicken instead of the usual beef because I grilled skirt steak (from Olympic Meat Market) the previous night. Variety is the spice of life. I went for thigh meat for a few reasons. One, it’s cheaper. Two, even though it’s higher fat it’s actually healthier for you since it’s heart-healthy unsaturated fat. Three, it has more flavor. 

While there, I noticed that organic zucchini was on sale. A perfect match for lasagna. They also had high quality parmigiano on sale. I had a jar of organic pasta sauce that I got for $2.19 from my last trip to Whole Foods sitting in my pantry. Otherwise I would have made my own sauce that would have cost me roughly the same amount, maybe another dollar or two.

Back home, I also had some lasagna noodles in the cupboard already. One thing when you have no income is that you try to eat what you’ve already bought and stocked. I picked some basil from my back porch garden. I also had some mushrooms that I bought at Stanley’s, where I buy most of my fruits and veggies.

So, I whipped up a bechemel sauce. I, for one, do not think that putting butter, flour, and milk together is too much fat. As long as the dairy comes from good cows and the flour isn’t processed or enhanced or anything unnatural. Then I cooked the ground chicken with onions, garlic, and some of the tomato sauce. I thinly sliced the zucchini and mushrooms. Then I put it all together.

Turned out to be enough for 4 full servings (I try to cook for 4 even though it’s just my wife and I, that way we have a good lunch the next day as well)when paired with a simple mixed green salad with sliced tomatoes. When I add up the costs of everything and divide by the 4 meals I got out of it I ended up making delicious healthy food for about $4 per person. I don’t know about you, but I’d much rather eat that than a $5 foot-long.
