Lamb, the prefered meat in Europe and a fantastic animal to stew up with veggies. With Spring in the air, but still a very chilly breeze shooting through Chicago, I thought that a simple Lamb Stew would be a great dinner. Not to mention I had a nice bottle of Syrah I wanted to drink, a nice match with lamb.

I first sautéed up a small onion that I diced up to medium-sized pieces with a chopped carrot, two stalks of celery chopped, and 4 cloves of minced garlic in some olive oil over medium-high heat. After a few minutes, when the veggies were turning translucent, I added a couple of large diced Yukon Gold potatoes. I didn’t want to add the potatoes too early because they fall apart when stewed for long periods of time. For long stews it’s usually best to use a denser potato like russet. But, I had a couple of Yukons that I needed to use up so I added them late to keep them together.

Only a couple of minutes after adding the potatoes I threw in about a pound of cut-up lamb leg meat. You want about 1 inch cubes. Anything smaller and the meat will get tough. I let the meat cook a little until the outsides were cooked but not the insides. Then I added a bunch of quartered cremini mushrooms and stirred that all around.

Once everything was coated with the olive oil and lamb fat I seasoned with a little salt (not too much), turmeric, cumin, dried basil, and a bay leaf. Then I added about a quarter cup of soy sauce and 2/3 cup of beef stock. Once the liquid came to a boil I put the lid on my pot and turned the heat down to medium. I let everything stew together for about an hour.

Once the stew was about ready I threw in a handful of freshly chopped parsley and turned off the heat. I served it up with some sliced bread. Well, I had it with sliced bread, Yuki had it with white rice. Whatever your pleasure, it’s all good.

Last night was the first night of Passover. In America, typically the first two nights of Passover are a huge deal in the Jewish household (in Israel they only have Seder on the first night). Families get together for big feasts of traditional foods and celebrate the liberation from Egypt led by Moshe himself, called a Seder. I do want to state that I am not religious, I’m atheist. However, I am culturally Jewish and thoroughly enjoy a meal that consists of Matzah Ball Soup and slow braised Brisket. This year my brothers and I had the first night at our cousins with my mom’s side of the family.

Here is the traditional Seder Plate that sits in the middle of the table. It contains the symbols of the Passover story. Starting at 2 o’clock is the Beitzah, a roasted egg that symbolizes the festival sacrifice. Then is the Zeroa, a roasted shankbone symbolizing the lamb’s blood that was marked on doors to keep the Jews safe from the 1oth plague. After that is the Maror, we use green onion to remind us of the bitterness and harshness of slavery. Charoset is next, apples, honey, walnuts, and wine that are blended into a thick paste representing the mortar used by Jews in constructing Egyptian storehouses. Next is Karpas, parsley is used for the coming of Spring. There’s a bowl of saltwater that is used to show the tears shed by Jews in slavery. You dip the Karpas into the saltwater. Finally, in the middle is a glass of wine that’s set aside for Elijah the prophet.

At each individual seat there’s a small plate with the edible symbols. After we get through the Haggadah and eat the Seder plate dinner gets started.

The first thing that get’s passed around is Gefilte Fish. It’s basically a classic Eastern European fish dumpling made out of whitefish and pike. It’s eaten with horseradish.

Next is the Matzah Ball Soup. I had two matzah balls, but had already cut them up into bite sized pieces when I remembered that I needed to take a photo. I also forgot to take a pic of the matzah, but that isn’t the end of the world. I do have to say that my Matzah Ball Soup is far superior, but that’s always the case.

Then some fresh vegetables. Cucumbers, tomatoes, and red onions.

Here’s Grandma’s chopped chicken liver. Unfortunately it’s the only thing she makes anymore. She cooks up the livers, seasons them, and mashes it all down. My cousin Lorrie has to salt it though. Grandma’s taste buds aren’t quite what they used to be. But hey, she’s 86! She gets a pass.

Some bagels made out of matzah meal. They resemble bagels in shape only, but they aren’t bad.

Here’s the famous slow-braised Passover Brisket. Brisket is to Passover what turkey is to Thanksgiving. Again though, my brisket is better. I made the brisket last year, but not this year. I need to take charge of it again for the betterment of all our digestion.

Dessert consists of various cakes made with matzah meal flour and fresh fruit. Chocolate cake with raspberries, strawberry shortcake, brownies, carrot cake, grapes and strawberries.

For some reason I always tend to eat too much at Seders.

I have to apologize to the environment as well as my physical well-being. There was no Meatless Monday last night. Cafe Hoang is sending all proceeds from yesterday’s take, including tips, to Haiti in order to help feed those who need. For my part I figured the least I could do was to eat some tasty food for charity. From what their website states, they’re doing it again next Monday, the 8th. I encourage you all to take part and keep my boy Jason Tran busy as hell cooking his ass off.

So, instead of a Meatless Monday post I’m going to tell you about a dinner we had at Yuki’s sister’s condo in Tokyo with her family last November. As you can see, it was family-style with some authentic Japanese flavors and some not-so-Japanese.

We had some shrimp tempura. Pretty simple, just fresh juicy shrimp deep fried in panko. Yuki’s mom scattered some cherry tomatoes, parsley, and little pieces of lemon around the plate. A squeeze of citrus, a dip in soy, some herb….makes me a happy man.

There was some Kuri Gohan, chestnut rice. This is a common dish throughout Japan. A favorite as chestnuts add a great flavor as well as nutrition to rice. Simply add the chestnuts to the rice while it’s cooking and then sprinkle some sesame seeds on top.

This is a Raw Tuna Salad that Yuki’s brother-in-law Jun made. Chunks of fresh tuna, avocado, and thinly sliced onion that’s been soaked in cold water to remove the rawness tossed in a vinaigrette. I forget exactly what he put in the vinaigrette, but it was something like sesame oil, soy oil, soy sauce, rice wine vinegar, and pepper. He lined the serving dish with some lettuce leaves and dumped it on top.

This one is a classic Japanese home cooked dish. Not sure what it’s called, maybe Yuki will leave a comment and let us all know. Yuki’s mom simmered some lotus root, bamboo shoots, green beans, shiitake, konnyaku, carrots, and chicken. Again, I’m not completely sure what the simmering liquid was, I think it was a mix of soy sauce, sake, and mirin. Maybe some dashi. Always delicious (at least when Tamiko makes it)!

We drank it all down with some Prosecco and some fantastic sake that we picked up on the way to the condo. After we ate we took turns kicking each others asses in Wii.

Sorry it took me a few days to put up this past week’s Meatless Monday. It’s been a pretty hectic week. Plus, I still have posts from Japan that I need to get up as well as other home cooked meals from both me and my wife. Soon enough my loyal readers (all three of you), soon enough.

At any rate, I had some kabocha that I need to use up so I decided to make a vegetarian stew based around it. It’s real simple to make, much like a pot of chili. It’s one-pot cooking at its tastiest.

I started by sweating some chopped onion in olive oil in a large pot. Then I added some ginger and garlic. After a few more minutes I threw some diced carrot and red pepper. Then I added some diced purple potatoes.  A few more minutes and then I finally added the star of the stew…the kabocha. You don’t want to cut the kabocha too small because it will start to become mushy and melt if you stew small pieces for too long (same with the purple potatoes).

After the kabocha was in there for about 5 minutes I seasoned with salt, pepper, paprika, cinnamon, and a little curry powder. Then I poured in about a quarter cup of orange juice and a half cup of water (I added a little more later because it absorbed and evaporated a little quicker than I anticipated, no worries, you can always add water). Once that all came to a boil I turned the heat down to a simmer, covered, and let stew for an hour.

After the hour was up I threw in some lentils then covered it for another 15 minutes. Then I added a can of drained brown beans. Once the beans were heated through I turned off the heat and threw in a handful of chopped fresh parsley and squeezed a half a lime in.

I was just going to serve it as is with some bread on the side, but Yuki decided it would taste better with angel hair pasta. That sparked an idea. Instead of angel hair we should use udon noodles! The problem with that, though, is that we didn’t have any udon. So, angel hair it was.

The beauty of a stew like this is that you can really do anything you like. Vegetables you want and any seasonings you want. Just make sure the flavors will compliment each other. The only think really missing from this dish was nice, juicy, tender chunks of lamb!

Another Meatless Monday in the books. I had some veggies and tofu I needed to use up so I made a vegetarian version of Mapo Tofu.

I chopped up half of an onion and sautéed it for a few minutes. Then I added a half-inch piece of ginger and two cloves of garlic, both grated. After a few minutes I threw in some green beans that I cut down to smaller pieces. A few more minutes and I added some diced baby eggplant  and some chopped mushrooms.

While that was all sautéing, in a hot skillet I poured in a couple tablespoons of vegetable oil and scrambled two eggs. The hot oil cooks the eggs up nice and fluffy. Once they were almost finished I put them on a plate off to the side.

Back to my veggies. I seasoned with salt and a lot of freshly ground Sichuan Peppercorns, that’s what will give it the numbing burn you need with a good Mapo Tofu. Then I added about three tablespoons of water just to deglaze some of the garlic and ginger bits on the bottom of the pan. After that I added three or four tablespoons of soy sauce and a spoonful of Korean Chili Paste, any kind of chili paste will work for the most part.

Once the sauce was nicely mixed I added the scrambled egg making sure it was broken into smaller pieces. Finally, I added a block of diced silken tofu that I had drained the water from. To drain the water I lined a plate with a couple of paper towels, laid the tofu on top, then a couple more paper towels, a cutting board, and then something to weigh it down a little. That sat in the fridge for about 45 minutes.

When the tofu was coated with the sauce and heated through the dish was ready, about 5 more minutes. I simply served it with plain white rice and a cold beer. Oh, right before I served it I threw in some chopped parsley. I did this only because I had some in the fridge and thought it would add a nice freshness to all the spice. It did.

So, yesterday was my wife’s birthday. I won’t tell you how old she is now, you should never ask a woman her age. Needless to say, she’s still younger and better looking than me. For this year’s birthday dinner I took her to L2O. I know, I know. I’m unemployed and shouldn’t spend that kind of money right now. But hey, what can you do? I have to say, we were both extremely impressed and satisfied by what transpired at the dinner table last night.

First of all, we were fortunate enough to have found a parking spot right in front of the restaurant. No easy task in Lincoln Park. We knew all would be well when that happened. Saved me $12 on valet!

The interior was perfect for the concept of Laurent Gras’s food. French sophistication with Japanese minimalism. It was really nice inside. The one weird thing we’re not used to is how they sat us. We got a 4 top to ourselves, but they sat us next to each other instead of across from each other. Our necks hurt a little bit since we had to turn our head to converse, but that’s being nitpicky.

We opted for the 4 course pre-fix. Our choice of one item from the Raw section, one from the Warm section, one from the Main, and one dessert. To be quite honest, deciding what to order might possibly have been the hardest decisions we’ve had to make in years! Everything sounded great. You can see the menu on their website, so you’ll understand what I mean.

Before we ordered we got not one, but two amuse buches. The first was a small little layered octopus and potato thing with a spicy soy paste underneath. It was the perfect little starter. Clean, fresh, and just enough spice to get our taste buds rolling. The second was a little…. you know what? I don’t remember what it was. I do remember it being delicious. You’d think I’d remember something from last night, but then again, my short-term memory is a little off.

From the Raw section Yuki ordered the Tuna and I ordered the Peekytoe Crab. The Tuna was served with little squares of tomato on top, hibiscus stems along the surface, little dollops of some sort of creamy sauce, and foie gras snow. I can only imagine that it’s frozen foie that’s been grated. It was a truly magnificent dish. Very elegant and buttery but not oily or greasy.

My Crab was a little lighter but not quite as elegant. It was served in a mound with a sliced avocado dome around it. Around the avocado mound was kaffir lime jelly and lemon oil. The crab was probably the best crab meat I’ve ever eaten. The sweetness shined through all of the tart citrus with the avocado’s creaminess adding depth.

For the Warm course Yuki ordered the Lobster Bisque. It was a boiled lobster claw with chestnuts and lobster/scallop dumplings. Table service lobster bisque broth was poured over it. I didn’t try the lobster claw, but Yuki claims that she’s never ever had lobster with such a soft texture. I did try a little of the dumpling and judging from that I’d have to say that Yuki’s right about the lobster. Easily the best bisque of all time.

I got the Lamb Tartare. In a circle mold they layered the bottom with the freshest raw lamb I’ve ever seen. On top of that was a layer of raw diced shiro ebi (sweet shrimp). Then, on top of that was a few sliced of pickled peach and some tarragon. I think it was gold fleck on top of that, but I can’t be sure. The sliminess of the shrimp and the sourness of the pickled peach combined with the herbal notes of the tarragon so well that you hardly even knew you had lamb underneath. It was such a clean taste that nothing seemed raw. As such, I think it belongs in the raw section, but I’m not complaining because then I’d have to have chosen between that and the crab.

On to the main course. Yuki’s Tai Snapper with Deconstructed Green Curry (I couldn’t find a pic online) was a masterpiece. The Snapper seems to have been steamed with lemon zest on top. It was so moist and delicious. There was some coconut sauce, dollops of some sort of spicy chili sauce. A brown sugar tuille. The coolest part were the parsley merengues. They were brought out getting frozen in liquid nitrogen and served tableside. They were so light and airy that they melted in your mouth making you wonder if you had even eaten anything at all. But the flavor was pure parsley. Genius! When you put everything together it really tasted like green curry. Wonderful deconstruction job. Her only complaint was that she wanted white rice with it. But, she’s Japanese. She wants white rice with everything.

I got the Pork Belly. Three thick slices of pork belly that had been seared in duck fat. Served with thin slices of potato, scalloped potato, and pureed potato in the scalloped potato. On top of everything they poured some truffle sauce. It was decadence on a plate! I can’t begin to describe to you just exactly what that crisp pig skin fried in duck fat did to my digestive tracts, but I will say this…it was a beautiful thing! My only complaint is that I couldn’t quite finish everything on the plate. I hate to waste food. (please note that the pic I found on Google only shows one slice, I was served three with three potatoes.)

Before dessert they sent out another amuse buche. This was a little ramekin filled with Meyer Lemon Marshmallow. It was super tart the second it hit our tongues, but almost immediately subsided into just a really palette cleansing citrus. It was the perfect thing to prepare us for dessert.

Dessert was two different souffles. One was a Grand Marnier, the other was a Bailey’s and Frangelico. Of course, he got the souffles just right. Super fluffy with a mild egg taste. They spooned a hole in at the table to pour in the alcohol. Absolutely scrumptious!

We weren’t quite done yet. After dessert they sent out these interesting pastry concoctions that the pastry chef came up with. In a small bundt shaped mold they poured some beeswax, let it burn a little to carmelize, then filled it with custard. I’ve never had anything quite like it.

But, there was still more. What meal is complete without chocolate? Our server brought out a loaf of some of the richest, creamiest chocolate mouse of all time! So good, so so good!

When we were done, Tony, the general manager, gave us a quick tour of the kitchen. Laurent Gras was back there with his army of chefs cooking away. It’s great to see a restaurant where the head chef is actually doing the cooking. Too often the big name chefs are never in the kitchen, having their sous chefs handle everything. Not here. Laurent is such a perfectionist that he tends the kitchen almost every single night. The man is tireless. I’m damn glad he is!

It wasn’t cheap, but when you feel like splurging for a special dinner you’d be hard-pressed to find a better place than L2O. It truly is a gem among Chicago restaurants.

It’s starting to get cold here in Chicago, that means less grilling and more braising. My first braise of the season was a batch of beef short ribs. One of the most flavorful cuts. Nice and fatty, lots of bone marrow, what could be better?

First, I browned them in a big pot with some olive oil to get some nice color then set them aside. Then I added onions, carrots, celery, and garlic. After about 5 minutes, when the veggies were translucent, I dumped in two cups of red wine and let it boil for a few minutes. I added three cups of beef stock, a quarter cup of balsamic vinegar, two bay leaves, a tablespoon of coriander seeds, and a bunch of thyme. Let it come to a boil and added salt and pepper. Then I returned the short ribs, covered the pot tightly, and put into a preheated oven at 250 degrees.

After 5 hours in the oven to took the pot out and removed the short ribs. The meat was tender that the bones fell right off, it sent tingles down my spine. I put the meat in a dish and tented it with foil to keep it from losing moisture and strained the braising liquid into a bowl and let it cool to room temperature allowing the fat to rise to the top. I scraped off the fat and returned the liquid to a pot and boiled for about 45 minutes so it could reduce. Then I added a little corn starch slurry to thicken it up to a more velvety texture and added a bunch of chopped parsley. There was my gravy.

I made some creamy garlic mashed potatoes along with quickly stir-fryed carrots, onions, and haricots vert to serve alongside.

Once everything was ready I put the short ribs back into the oven at 400 for 10 minutes to reheat them and then plated everything up. It was one of the best short ribs I’ve ever eaten in my life! The perfect thing for a chilly night.

Here’s one of my favorites. It’s healthy, delicious, and cheap.

Season boneless, skinless chicken thighs with olive oil, cumin, paprika, salt, and pepper. Grill them!

Sautee onions with garlic, zucchini, eggplant, carrots, and a can of chickpeas. Season the veggies with cumin, paprika, salt, and pepper as well. Mix a little soy sauce (about 2-3 tbsp) with some chicken stock (about 1/4 cup) and dump into the veggies to add a little moisture as well as a little more depth to the flavor. If I had some fresh parsley I would have added it once taking the veggies off the heat, but I forgot to pick some up. I did squeeze a little lemon juice in it as well as on top of the chicken once taken off the grill.

Serve with white rice and you’re good to go. If  you want, you can also serve it with a salad. A simple lettuce and tomato salad would do the trick, as would something more Middle Eastern like Tabbouleh.

All in all, this dish costs about $4.50 per person ($4.75 with salad).
