Finally, I got Meatless Monday back into my life. No Bears game (thank goodness, I don’t think I can stand to watch that O-line pretend to block anymore) or anything that calls for carcus so I cleaned out some of the vegetables I had in my fridge. With the weather getting a little chilly I thought a nice hot bowl of Minestrone would hit the spot, especially since Yuki loves soup. To go with it I made some mushrooms in soy milk on toast.

For the minestrone I used 1 can of brown beans, 4 quarts of vegetable stock, 1 28oz can of skinned tomatoes, 6oz of farfale pasta, 2 ribs of celery chopped, 1 carrot chopped, 1 zucchini chopped, 1/2 an onion chopped, 1/2 green bell pepper chopped, 1 yukon gold potato skinned and chopped (2 in the pic but I only used 1), 3 garlic cloves chopped, some basil thinly sliced, and Parmigiano Reggiano grated.

In a heated stock pot I poured in about 2 tablespoons of olive oil and then sweated down the onion, carrot, and celery for about 3 minutes. Then I added the green pepper and garlic and let that go for another 3 minutes. I dumped the juice from the tomato can in and crushed the tomatoes with my hands. Once the tomato juice started to boil, about 1 minute or so, I poured in the stock and seasoned with salt and pepper and 1 bay leaf. Once the stock started to boil, about 2 or 3 minutes, I added the potato and zucchini. The potato and zucchini obviously lowered the temperature of the soup, so a few minutes later when it came back to a boil I added the pasta then covered the pot and turned the heat down from medium-high to medium. I let it simmer for about 15 minutes to let the pasta cook properly.

While the pasta was cooking I heated up my saute pan and got the mushrooms ready. I thickly sliced (about 1/4-1/3 inch) 4 button mushrooms and a container of cremini mushrooms and sliced up 3 green onions. I melted 1 tablespoon of butter and poured in another tablespoon of olive oil then dumped all of the mushrooms and green onions in. I let them cook down for about 10 minutes until the mushrooms started to release their moisture. Then I poured in about 1/4 cup of soy milk and let that thicken up for about 2 minutes. I added some thinly sliced basil and turned off the heat. I toasted some sliced of challah during the cooking.

To serve, I ladled some soup into my bowls and topped it with sliced basil. I put the toasted challah on a plate and spooned some of the mushrooms on top. Then I topped everything with fresh grated Parmigiano Reggiano.

One of the great things about meatloaf is that you can do pretty much anything you like with it. You can use any kind of ground meat, vegetables, sauces, etc. It’s also extremely simple to make. I have some rosemary still growing on my back porch and with the weather starting to cool down here I figured I should use it up before my plant dies. With that in mind I decided to make a very straight-forward meatloaf and use up the rosemary, although I still have some left that needs to be used within the next week or so.

My ingredient list includes 1.5 pounds of ground beef (20% fat), 1/5 pound of ground pork, 2 small celery ribs diced, ketchup, 2 eggs beaten, 3 cloves of garlic minced, a bunch of green onions sliced, panko, 1/2 cup of frozen peas, and a bunch of rosemary chopped.

In a large glass bowl I mixed together the ground meats with the celery, eggs, garlic, green onions, peas, rosemary, and some salt and pepper. Once it was all good and mixed I let it sit for about 15 minutes to let the flavors settle.

 

Once the meatloaf settled a little I shaped it into a loaf and put it into a loaf pan. I squeezed some ketchup on top and brushed it to cover the entire top surface. Then I sprinkled some panko over the ketchup. I put it in a 350 degree oven and let it cook for about an hour.

For some side vegetables I used 1.5 carrots chopped, 1/2 onion sliced, a bunch of haricots vert, and some more chopped rosemary.

I simply laid vegetables out in a roasting pan, drizzled them with olive oil, and seasoned them with salt, pepper, and the rosemary. I put them in the oven for about a half hour.

Once I got the vegetables in the oven I boiled some water and salted it. I took 5 good-sized Yukon Gold potatoes and skinned them then chopped them into quarters and dropped them in the boiling water along with 2 garlic cloves cut in quarters as well. I let them boil for about 10-15 minutes. Before draining them I reserved a cup of the water. After draining them I put the potatoes and garlic back into the pot, scooped about 1/3 cup of sour cream in, about 1/2 cup of the reserved water (didn’t need the rest but had it there in case I wanted to thin out the mashed potatoes), salt, pepper, and more chopped rosemary. With my potato masher I mashed it all up till they were smooth and creamy.

After Tuesday night’s overly complex debacle of a meal we wanted something clean and simple for dinner last night. Yuki had requested my matzo ball soup, so that’s what I gave her. (feel free to insert any number of jokes)

The ingredients I use for my chicken soup are 1 diced onion, 3 medium carrots chopped, 3 stalks of celery chopped, 5 garlic cloves peeled but left whole, and 1.5 pounds of skin-on bone-in chicken thighs.

There are two basic ways to make chicken soup. One is to throw all of the ingredients into a stockpot, cover it with cold water, and bring it all to a slow simmer for a couple of hours, usually with a whole bird instead of just thighs (I think white meat in chicken soup is a waste as it doesn’t have nearly as much flavor as dark meat). That’s they way my dad makes it and his soup tastes pretty good. I do it a little different.

I heat up my stock pot and pour in about 3 tablespoons of olive oil. Then I dump in the onion, carrots, and celery and let them sweat for about 5 minutes. I don’t want them too translucent, I just want the sweetness drawn out a little. After the veggies are slightly cooked I lay the thighs in skin-side down. A minute or two later I pour in 2 quarts of hot water, add the garlic, a bay leaf, and a couple pinches of salt.

After it’s been at a low boil for a few minutes a foamy grit will surface. I take a large spoon and skim that off. I do that 6 or 7 times. This gives the broth some clarity. The muck isn’t bad for you, it’s just bitter and unnecessary. Skimming broth is the key to a clean soup. Once the foam stops surfacing I turn the heat to medium-low, cover the pot, and let it slowly simmer for about 2 hours.

Once the soup has cooled a little I take out the chicken, skin it, and shred the meat. At this point the chicken should be relatively flavorless as hopefully all of the taste is in the broth. I like to put the chicken back in for the substance.

There’s absolutely nothing wrong with using the Matzo Ball Mix for your mazto balls. While it isn’t that difficult to do it from scratch, the mix ensures the perfect texture every time. You just need one packet of mix, two eggs, and two teaspoons of oil. I also add a tablespoon of dried oregano for a little more flavor.

Mix everything in a bowl and put it in the fridge for 15 minutes to harden up a tad. While it’s in the fridge bring the soup to a light boil again. The package says to boil them separately in water, but matza balls should absorb some of the broth flavors.

Keeping your fingers wet, the mix is sticky, form balls about the size of a quarter and drop them into the boiling soup. There’s absolutely no need to make them any bigger. They do expand as they cook and if you make them too big the soup flavor won’t penetrate all the way through. I’ve never understood why some people make their balls so damn big. Maybe to compensate I guess. At any rate, that’s it. Let the balls cook for about 15 minutes and the soup is ready.

I made my wonton crisps while the soup was simmering. I used 1 package of shiitake small diced, 5 eggroll wraps cut in half diagonally, 2 cloves of garlic minced, 6 green onions sliced, and some fresh shiso leaves (the same ones our friends gave us, they are pretty damn delicious!).

I heated some oil to 375 degrees in my little Cuisinart deep fryer and fried up the skins. I let them drain on paper towels while I prepared the mushrooms.

In a heated pot I poured in 2 tablespoons of sesame oil and added the garlic. I let the garlic go for about 45 seconds and then I threw in the shiitake and green onions. I sort of stir-fried them for about 5 minutes and then poured in 1.5 tablespoons of soy sauce and a pinch of black pepper. I let the soy sauce absorb into the shiitake for about 3 minutes and then turned of the heat.

To serve, I laid the crisps down on a plate. On top of them I placed one shiso leaf. Then I spooned some shiitake mixture on top of that. That’s all she wrote, a great Jewish-Japanese dinner.

I thought I had come up with a ground-breaking idea the other day when I conceptualized gnocchi made from tofu. Not quite sure how to go about doing it, but with a few ideas, I googled it. Much to my dismay, Craig Koketsu (chef at Park Avenue Spring and Quality Meats) had already done this. On the one hand I was a little upset because I can’t claim to be the first. On the other, it confirms my genius that a high-caliber chef had also come up with this idea. He did his as a re-imagined way to do Mabo Tofu. Mine was a Meatless Monday way to get protein into a dish. At any rate, I decided that it was best to use his recipe for the gnocchi themselves since it was already a proven method.

In a food processor I processed two 12 oz blocks of extra firm tofu along with 1 cup of tapioca flour and 1 tablespoon of salt. I’m not real sure why he used tapioca flour, but it is a finer ground than regular flour as well as being a better binder. It’s almost a cross between starch and flour. Once everything was well blended I poured it all into a large ziplock bag (I don’t have a piping bag, so I used the ziplock and snipped one of the corners off).

I brought a pot of water up to a high boil. After the mix had rested in the bag for about ten minutes I started to squeeze it out, snipping off approximately 1 inch lengths. I let it boil until the gnocchi had all started to float to the top. Then I drained them and chilled them in a bowl full of ice water. Once they chilled I drained them again and patted them dry, then set them aside until the sauce was ready.

To kind of bridge the gap between Italy and Asia I used a mix of vegetables that included 5 oz of sliced shiitake (instead of cremini), cherry tomatoes (during cooking I changed my mind and used a 14 oz can of diced tomatoes instead), 1 carrot chopped, 3 garlic cloves minced, some back porch basil, 1 celery rib halved and chopped, 6 green onions sliced, and a large handful of baby spinach (about 3-4 oz).

To make the sauce I heated up my pan and poured in a couple of tablespoons of olive oil. I let the garlic gently fry for about a minute and then tossed in the carrot and celery. About 5 minutes later I added the shiitake and green onion. Once they were cooked down a little, maybe 3 minutes, I poured in 1/4 cup of white wine and let that boil away. After the wine had evaporated I poured in the can of diced tomatoes and seasoned with salt and pepper. Once the juice from the can of tomatoes started to boil I threw in the spinach and turned off the heat.

In about 1/4 cup of boiling water I threw in two portions of the gnocchi and let them heat up for about 2 or 3 minutes.

To serve, I took the gnocchi out of the water with a slotted spoon and laid them on the plate. I topped them with some of the sauce. Then I garnished with parmesan cheese and basil.

All in all this dish wasn’t quite what I was hoping for. The gnocchi were great and the sauce was ok, they just didn’t quite meld together they way I had it in my head. I make sauce like this quite often, but it is definitely better with regular pasta. As far as the gnocchi, I would try a Mabo Tofu next time as I think those flavors match tofu much better. This was not a complete failure, it just wasn’t a huge success. Lesson learned.

I had some angel hair pasta that I wanted to use up last night. Combine that with all of the Japanese ingredients I had in my fridge that needed to be eaten I whipped up a bolognese sauce with Japanese flavors. Note, I usually cook for 4 so that we have lunch the next day, but since it was Friday and we don’t need to take a lunch anywhere on Saturday this recipe was for 2.

My ingredient list for the bolognese was a package of enoki mushrooms, 1 negi thinly sliced (I had two but decided only to use one), some ginger and garlic minced, 1/2 carrot cut into quarter moon slices, 1 rib of celery cut down the middle lengthwise and then sliced, 10 cherry tomatoes halved, some wakame seaweed, 1/4 pound of ground beef, and 1/4 pound ground pork. What I didn’t get in the photo was some cooking sake, mirin, and soy sauce.

In my pot I heated up about 2 tablespoons of soy oil and 1 tablespoon of sesame oil and then let the garlic and ginger go for about a minute. Then I tossed in the carrot, negi, and celery for about 5 minutes until they just started to soften a little. After that I added the ground meats. They took about 5 minutes or so to cook and break up, I added just a touch of salt (not too much since I was about to add some soy sauce) and some black pepper. Once the meat was broken down I poured in about 3 tablespoons of sake and let that boil off for a couple of minutes before adding about 2 tablespoons of soy sauce and 1 tablespoon of mirin. Once all the liquid was almost completely boiled off, about 2 more minutes, I added the cherry tomatoes and enoki. A couple of minutes later I mixed in the wakame and then turned off the heat. The wakame doesn’t need to be cooked, so I just wanted its flavor to incorporate into the meat.

While that was all going on I cooked some angel hair pasta and drained it thoroughly.

To serve, I piled the pasta on the plate and then topped it with the bolognese. On top of that I put some katsuobushi (dried bonito flakes). Some Asahi to wash it all down and we were good for the night.

What many people don’t know is that the Spanish were using pasta way before Marco Polo brought it over to Italy. I’m referring to fideos, short pasta that’s very similar to broken angel hair. In fact, if you can’t find fideos you can easily use angel hair pasta. Just break it down into 2-3 inch pieces. Another difference is that the Spanish like to toast the dried pasta before using it. This does two things. First, it adds an extra nuttiness to the flavor. Second, this causes the pasta to get even drier allowing it to soak up more of the sauce. Cooking fideos with clams is a classic Spanish dish, although I added more vegetables than the Spanish typically do to clams. I’m Jewish (I know I know, clams aren’t Kosher, but I’m not a religious man, I’m a foodie!), not Spanish, so I can get away with that.

The first thing I did was toast the fideos. I spread about 4-5 oz’s on some foil and toasted them until they became nice and dark golden in color. Then I let them sit and cool while I prepared the rest of the dish.

My ingredient list is two chopped celery ribs, half an onion diced, 1 purple potato diced, two plum tomatoes chopped and seeded, three garlic cloves minced, some broccoli florets broken down into smaller pieces, handful of basil leaves from my back porch, and a half cup of white wine. I also quartered an eggplant lengthwise, but that was used as a side and not in the main dish.

Of course, the stars of the show were the clams. I used little neck clams and got 12 of them for two portions. I only needed 5 per person, but got the extras in case some didn’t open. Sometimes my brain works perfectly as two of them didn’t open during cooking.

I started by sautéing the garlic and onion in some olive oil for about 6 minutes, just until the onion started to get translucent. Then I added the celery and let that go for another 3 minutes before added the potato. The potato was cut small enough that it didn’t need too much time to cook through, only about 5 or six minutes before adding the broccoli. Again, the broccoli was cut pretty small, it only needed about 3 minutes or so, then I added the tomato and seasoned with salt, pepper, and a few dashes of paprika. I mixed it all together and then added the toasted fideos. Once the fideos were well incorporated I poured in the white wine and let that come to a quick boil. Once boiling, in went the clams. I covered the pot and shook it around every minute until the clams opened up, anywhere from 3-6 minutes. Any clams that don’t open need to get tossed in the garbage immediately.

I kept the eggplant extremely simple. I heated up some olive oil to its smoking point and pan-fried the eggplant on all sides until it got a nice toasty color. If the oil isn’t hot enough the eggplant will absorb it all, so you need to make sure it’s hot.

To serve, I took the clams out off the pot and stirred in the basil leaves. That also allowed all of the clam juices to be evenly mixed into the dish. Then, I just put the clams on top of the fideos and vegetables in the bowl and drank everything down with the white wine I used in the dish. I sliced up some crusty bread to mop up the juices.

Alright, so I didn’t cook last night, nor did I post anything yesterday. In light of that here’s what I made Wednesday night, a Pork Curry. This recipe came from my father-in-law in Japan. He was very excited when he sent it over and translated it into English for me. Some of the measurements that I used are a little different from his since he’s on the Metric System. I also did a couple of things different. Overall my dish was pretty true to his recipe.

To start, I sautéed a sliced onion, a shredded carrot, and two ribs of celery chopped in some soy oil with garlic and ginger. Uichiro adds a little butter, I didn’t because I’ve been eating a lot of butter lately. I need to keep my girlish figure.

Once the vegetables were sweated down for about 7 minutes I added about 2/3’s of a pound of pork chops that I had sliced to about 1/4 inch width. I let the pork cook just until the exterior turned white but the insides were still uncooked. Then I added 2 tablespoons of curry powder, about a teaspoon of black pepper, 5 tablespoons of flour, 1 tablespoon of garam masala, and 1 teaspoon of turmeric. I stirred that all in and sautéed for a few more minutes. Then I poured in 50 ml of white wine and let it boil down.

Once the wine had boiled down I added three cups of water, a 14 oz can of diced tomatoes (Uichiro chopped 1 cup of fresh tomatoes), 1 tablespoon of soy sauce, 1 tablespoon of Worcestershire sauce, once chicken bouillon cube, a bay leaf, salt, and pepper. Once that all came to a boil I covered it and turned the heat down to med-low. That simmered for about 40 minutes.

After the 40 minutes I took a half an apple and grated it into. This adds a lot of sweetness as well as some starch to help the flour thicken it up a bit. I also added a large pinch of sugar to help balance out the spice.

To add a green element to the curry I threw some mache leaves in right after turning off the heat. Uichiro didn’t do that. It really didn’t need it, I just wanted to add the color.

Overall, I have to say, it’s another winner from Uichiro. Next time I think I’ll use about a half cup less water, but otherwise it was delicious. I am disappointed that he didn’t have a cool name for the dish though. He calls his meatloaf “cool breeze amongst the pine trees”. I have no idea why, but it is a damn good meatloaf!

For Meatless Monday last night I made some burger patties out of quinoa. To go along with it I made a very simple vegetable soup.

To make the soup I sautéed a half onion, a carrot, two ribs of celery, a fennel bulb, and some asparagus all chopped in some olive oil with minced garlic. I let the vegetables sweat for about 6 or 7 minutes.

Then I added two chopped tomatoes, a few cups of boiling water, a bay leaf, and the rind from some parmigiano-reggiano. I seasoned with salt and pepper and let it simmer over low heat for a while.

To make the quinoa patties I first sautéed a few thinly sliced green onions in some olive oil with a diced garlic clove. After a few minutes I added a cup of quinoa that I had rinsed a few times. I let the quinoa cook in the oil for a few minutes and then added 1.5 cups of hot water. Once that came to a boil I covered the pot and let it simmer at low heat for about 15 minutes.

After all the water had been absorbed I fluffed the quinoa with a fork and stirred in some grated parmesan, a handful of thinly sliced basil, salt, and pepper. Then I let it cool down for a bit. After it had cooled, I stirred in one egg and formed 8 patties. I put them in the fridge for about 15 minutes to firm them up a bit.

In batches, I fried them over high heat in butter. I added a little butter as need be.

To serve, I laid a couple of patties on top of baby arugula. I made a simple sauce of basil, olive oil, balsamic vinegar, salt, and pepper in my small processor. I drizzled the sauce on top and then tossed some parmesan on top of that.

It turned out delicious, but the patties were very fragile. If I make them again I’m going to add some bread crumbs. I think that will help keep the patties firm and less prone to falling apart. But the flavors were great.

Last night I used up ingredients that were already in my fridge. Fresh vegetables don’t last forever, so I use them up within a couple of days after purchasing them. I decided to make a nice soup and get some salmon to grill alongside it.

For the soup, I started by sweating down half an onion, a carrot, and a rib of celery (all chopped) in some olive oil. After about 7 minutes I tossed in 2 crushed garlic cloves. A couple of minutes later I added a half of a yellow bell pepper chopped. I let that all sweat out for a few more minutes.

Then I dumped in one 14oz can of diced tomatoes (no salt added), one cup of chicken stock, and 1.5 cups of water. I stirred that all around and seasoned with some salt. There was a Parmigiano Reggiano rind in my cheese drawer, I try not to through them away once the grateable part of the cheese is used for reasons like this, so I dropped that in as well. By doing so a subtle sharpness is added to both the taste and aroma, you can tell there’s Parmigiano in there. Once that started to boil I covered the pot and simmered over a med-low heat for about 20 minutes.

I had a zucchini in my fridge from the day before, so I chopped that up and added it along with a half cup of Israeli couscous that was sitting in my cabinet. Then I let the soup simmer for another 10 minutes.

All I did to the salmon was rub some olive oil over the flesh, then salt and pepper. I grilled it to get the skin crisp.

To serve, I drizzled a little balsamic vinegar on the salmon and garnished with some fresh basil. I also sliced up a handful of basil and added it to the soup along with some black pepper just before serving. White rice was also on the menu.

I stopped by Andy’s Deli the other day, easily one of my favorite grocers in Chicago. While there, I really had no choice but to pick up some of their smoked kielbasa sausages. So friggin good! They have the best kielbasa in town. To serve with grilled kielbasa I made a carrot soup, some white rice, some chickpeas, and no kielbasa would be complete without a dollop of mustard. I used my favorite Boetjes.

For the carrot soup I chopped up three large carrots, half of an onion, 1 celery rib, and 3 cloves of garlic. I sautéed it all in olive oil for about 10 minutes. Then I poured in about 1.75 cups of chicken stock, half a teaspoon of turmeric, half a teaspoon of cumin, half a teaspoon of paprika, and salt. I brought that to a boil, lowered the heat to medium, covered, and let simmer until the veggies were soft (about 15 minutes or so).

After letting the veggies cool down a bit I dumped them all into the blender and pureed it. While it was blending I poured about a half cup of olive oil in to make the soup silkier. I put it all back into the pot, tasted for seasoning, and added pepper. When it came time to serve I simply reheated it.

To make the chickpeas I started by sautéing a quarter of an onion small diced in butter and olive oil with 2 minced garlic cloves. I had a couple of purple potatoes left from the other night so I diced them up and added them. I didn’t stir too much because I wanted the potatoes to get a little crisp. Once they were I added about a quarter cup of chicken stock, salt, and pepper.

Once the stock had reduced by about half I added one can of drained chickpeas. I let that cook for about 10 minutes over medium-low heat. The chickpeas just needed to be heated through.

Once they were I threw a bunch of baby arugula in, turned off the heat, adjusted the seasoning, and let it sit until the kielbasa were cooked.

I threw the kielbasa on the grill. They were smoked so I only needed to char them for texture and to heat them through. Once they were ready dinner was served.
