Alright, last night I was able to knock out one more Iron Chef from my list as Yuki’s parents took us along with her sister to Iron Chef Italian Masahiko Kobe’s restaurant, Ristorante Massa. It’s located in a very cool neighborhood of Tokyo called Ebisu tucked away off a main street. It’s a simple little restaurant that seats only about 25-30 people. It was full when we were there, and probably is most nights due to his celebrity status and fantastic food.

There were two pre fix menu options. The one we opted for was the less expensive of the two (approx $65 compared to $85) as it offered one less dish than the other. Since none of us are fat Americans it seemed like the right choice. We could chose one from each category of Antipasto Freddo (3 choices), Antipasto Caldo (three choices), Primo Piatto (5 choices), Secondo Piatto (4 choices), and either a Dolce (5 choices) or Formaggio Plate (pick two out of 4 cheeses) followed by either tea or espresso. We washed down the meal with some Chianti Classico. I have pics of everything, but I’m only going to mention what I ordered otherwise this post will be way way way too long. This is already one of the longest introductions I’ve written. So, on to the food!

We each started off with the Oyster starter that was not part of the Pre Fix. It is probably the largest oyster I’ve ever eaten in my life! So fresh and clean it was simply served in its own juices with a little squeeze of lime and some rock salt. What more does a good oyster need?

Then they brought out an amuse bouche. Baked pasta filled with ricotta cheese, a little slice of pear, and an Italian parsley leaf. It almost reminded me of matzoh with cream cheese, a treat dear to my stomach for one week out of the year.

The Antipasto Freddo I ordered was a foie gras terrine with chamomile. It was served with smoked Ishikawa potatoes, a yuzu consomme jelly, Italian Arugula, and sprinkled with flaked red pepper.

My Antipasto Caldo of choice was a bit of a mis-translation. I thought I was getting duck confit, when it showed up we thought is was duck balls, but it turned out to be chicken gizzards. I actually preferred it to be balls since I’ve never eaten bird balls, but it was still outstanding! The gizzards were served on top of a kabocha puree with thinly sliced red onions that were soaked in cold water, a shishito pepper, and a pea pod.

The Primo Piatto, pasta course, I ordered was chitarra with cremini sauce. The sauce was as simple and delicious as could be…olive oil, garlic, and minced cremini mushrooms. There were big slices of sautéed cremini in it as well. With Kobe being the “Prince of Pasta” it was easily the best pasta in my life. Cooked to perfection, nice and al dente.

For the Secondo Piatto I got the beef, of course. A perfectly grilled strip loin to medium rare covered in a light mustard sauce and served with asparagus, a shiitake, a pea pod, and a slice of red pepper. Uichiro, Yuki’s dad, ordered his with black truffles on top. I wish I knew I could do that. He gave me a few of the truffles and they made an outstanding steak even better…as truffles always do.

I opted for the Formaggio instead of a Dolce. I chose the parmigiano and taleggio. He served it very typically with some dried fruits and sliced nut bread. I washed it down with lemon tea instead of espresso as I wanted to sleep later on.

Maki, Yuki’s sister, couldn’t finish her Tirimisu so I took it upon myself to not waste any food. It was served with kiwi sorbet and fresh fruit. Of course, it was the best tirimisu that I’ve ever digested.

Overall, this was by far the best Italian food I’ve ever eaten, hands down. And I’ve been to Italy. I’m sure there are places as good in Italy, but when Yuki and I went there we couldn’t afford any of the top restaurants. We ate some pretty damn good food there, but nothing as refined as this.

I have also said before that I didn’t think modern Italian food existed. I said that due to the lack of creativity and refinement of Italian food in Chicago (although, I have yet to eat at Spiaggia). At home it’s mostly humongous bowls of pasta with thick rich sauces that weigh you down. Nothing like Ristorante Massa where the portions were clean, fresh, perfectly sized, and creative modern takes on classics. I have a newfound respect for Italian food.

While I have eaten at Sakai’s, Michiba’s, and Chen’s restaurants, this is the first time that an Iron Chef has actually cooked for me. It was very exciting to see Kobe back in the kitchen when we walked in. I think there are two reasons Kobe was cooking for us. First, he only has one restaurant while the others all have numerous. So you know where Kobe will be when he cooks as opposed to it being a crapshoot for the others (I missed Sakai by 4 hours back when Yuki and I went to La Rochelle). Second, he’s still young at only 40 and still wants to create. Michiba is an old man and doesn’t cook anymore and I don’t think Sakai cooks too much anymore either.

No more Iron Chefs this trip as we head back to cold Chicago tomorrow. Next trip I’ll visit Iron Chef Japanese Nakamura Komei and maybe Honorary Iron Chef French Ishinabe Yutaka. Morimoto will have to wait as his Teppanyaki restaurant here in Tokyo starts at approx $300 a head!

Meatless Monday continues. I went back to my days in Egypt for last night’s dinner. In Dahab, as in many parts of Egypt, they eat a dish called Koshary as a quick lunch. It’s usually sold from street vendors as opposed to restaurants. In Dahab, my dive shop was on the far north end of the bay. The Koshary guy, much like Chicago’s ice cream bike guys, came from the north so I always got the freshest Koshary. Besides Koshary, he also sold rice pudding, but I’d usually wait and get that for dessert as it was sweeter.

Koshary is a bowl filled with crazy goodness. Rice on the bottom, spaghetti noodles on top of that, lentils on top of that, all covered with spicy tomato sauce, then topped with chickpeas, and finally garnished with fried onions. All for about 30 cents ( in Egypt, it cost about $2.00 per serving last night).

I didn’t make a pure Koshary though. First thing I did was dice up a medium eggplant and let it sit in a colander with some salt for about a half hour. Then I rinsed it and dried it. This takes away some of the fruit’s bitterness. After that I sauted a chopped onion in some olive oil for about 4 minutes with a few chopped garlic cloves. I ground up about a teaspoon of coriander seeds with my pestle and mortar and added that along with about a teaspoon each of cumin and cinnamon. Then I added the eggplant chunks and let them cook for about 5 more minutes. I dumped in a 28 0z can of chopped tomatoes, seasoned with salt and pepper, then let simmer over a medium heat for about 15 minutes. After that I added a can of chickpeas and let everything simmer for another 15 minutes so that the tomato juices would reduce down to a thicker stew.

While the juices were reducing I friend a thinly sliced onion in extremely hot oil with some sliced garlic. The garlic burns quickly, but as long as you don’t eat it the aroma infuses the onion. You don’t want to burn the onion, but you want a nice crisp texture. Once their cooked set them aside on a small plate.

To serve, instead of throwing everything in a bowl, I put the rice on the side and ladled the stew next to it. I garnished it with the fried onions and some cilantro and had a mixed green salad along side.

It’s starting to get cold here in Chicago, that means less grilling and more braising. My first braise of the season was a batch of beef short ribs. One of the most flavorful cuts. Nice and fatty, lots of bone marrow, what could be better?

First, I browned them in a big pot with some olive oil to get some nice color then set them aside. Then I added onions, carrots, celery, and garlic. After about 5 minutes, when the veggies were translucent, I dumped in two cups of red wine and let it boil for a few minutes. I added three cups of beef stock, a quarter cup of balsamic vinegar, two bay leaves, a tablespoon of coriander seeds, and a bunch of thyme. Let it come to a boil and added salt and pepper. Then I returned the short ribs, covered the pot tightly, and put into a preheated oven at 250 degrees.

After 5 hours in the oven to took the pot out and removed the short ribs. The meat was tender that the bones fell right off, it sent tingles down my spine. I put the meat in a dish and tented it with foil to keep it from losing moisture and strained the braising liquid into a bowl and let it cool to room temperature allowing the fat to rise to the top. I scraped off the fat and returned the liquid to a pot and boiled for about 45 minutes so it could reduce. Then I added a little corn starch slurry to thicken it up to a more velvety texture and added a bunch of chopped parsley. There was my gravy.

I made some creamy garlic mashed potatoes along with quickly stir-fryed carrots, onions, and haricots vert to serve alongside.

Once everything was ready I put the short ribs back into the oven at 400 for 10 minutes to reheat them and then plated everything up. It was one of the best short ribs I’ve ever eaten in my life! The perfect thing for a chilly night.

Sepia

Yesterday was my 33rd birthday. My wife and I use birthdays as excuses to enjoy finer dining than a typical eve. Last night she took me to Sepia, a place that we’ve wanted to go to for quite a while now. While I would have liked to try Kendal Duque’s cooking, new Executive Chef Andrew Zimmerman is definately his equal in the kitchen.

The interior definately has that old-world feel with lots of dark brick, leather tables, buffed mirrors, and large chandeliers. But it isn’t stuffy at all. The place was quite comfortable and not too loud like most exposed brick restaurants. But it was the food that stole the show, not the interior.

We started off with some Gruet Blanc de Noir. I personally think that New Mexico turns out some of our countries best bubbly. For apps, Yuki ordered the scallops. Two big, meaty scallops cooked to absolute perfection! A nice sear on top and bottom while nicely opaque in the middle. We both feel that they’re the best scallops we’ve ever eaten in this city. They were served with a sunchoke puree, marcona almonds, and some serrano ham on top with frisee.

I ordered the sweetbreads. I’ve never really been a fan of sweetbreads, but I’ve only eaten them once before. However, if I’m going to consider myself a foodie then I need to order the proper food. Damn glad I did! Damn glad! Those glands had a texture that was like a cross between scallops and foie gras. It almost had a scallop-like sweetness as well, but also the butteriness of foie gras. Chef served them with this orange-fennel sauce. It was thick, creamy, and you could really taste the bitterness of the orange. Perfect match with the sweet sweetbreads. (I get the sweet part, but it really is more like foie than a bread). Some frisee on top as well.

For entrees, Yuki ordered the Pork Porterhouse served on some grits with a bourbon sauce and cherries. Again, perfectly cooked, nice and medium rare on the tenderloin side and medium on the strip side. The accompaniments also complimented nicely. Fortunately for me it was too big for her stomach, so I get to eat the rest of it today for lunch! We paired it with a glass of Dolcetto D’Alba.

I ordered the Duck. A perfectly cooked breast; the skin nice and crispy, the meat nice medium rare and juicy. It was served atop a medly of chantrelle mushrooms, green onions, marcona almonds (Zimmerman must love these almonds, but for good reason), and these little spongy black things that we couldn’t quite figure out what they were. Yuki thought they were little pieces of liver or something, I thought they were some sort of mushroom stem. It was killing us not knowing what they were so I asked the manager….duck gizzards. (Yuki was closer, she wins) That was the first time I’ve ever eaten duck gizzards and I gotta tell you, I love them! They added a deeper flavor to the dish that the mushrooms alone probably couldn’t provide. Delicious! I drank a glass of Portugese wine, and interesting red blend from the Douro Valley. Nice recommendation from our server.

The desserts were awesome too! We had the Ricotta Pound Cake with carmelized peaches, buttermilk ice cream, and pecans as well as the Blueberry Cobbler with sweet corn ice cream, lemon-thyme cookies. Of course, on my plate was the obligatory “Happy Birthday Dan” written in chocolate with some artistic design. Always a nice touch. The food runner also said he’d sing to me for an extra fee. I’m cheap (even though dinner was Yuki’s treat), so we declined.

All in all, I have to say that Sepia is one of the better dinner’s I’ve had a quite a while. It is easily in the upper-echelon of Chicago restaurants. Because of it I can’t wait for my next opportunity to munch on some sweetbreads!

Spaghetti a la Yukiko

With all of this cold, wet weather we’ve had here in Chicago this summer I find less and less motivation to run to the markets as often as I like. With the need for a complete and satisfying dinner the other night and the lack of a market visit my wife told me she’d clean out the fridge and cupboards and cook up something delicious. I have to say, her spaghetti didn’t disappoint.

She found a can of tuna and always does something beautiful with it. So that was the protein. There were some pea pods, orange peppers, onions, mushrooms, and carrots in the fridge. She also found some heavy cream that we hadn’t used yet (she was going to make a quiche a couple of nights before, but cheesed out on it). We always have angel hair pasta on hand, so her dish was written.

She first cooked the tuna in a little oil to give it a little texture on the outside. After removing the tuna she cooked the veggies and then added the tuna back in along with the cream. Not sure if she added any alcohol or not, but whatever she did it worked. Toss it with the noodles and serve with cheesy garlic toast and a cold beer. Oh, and we had two little Juliette Tomatoes that were ripe from our porch garden, so we each ate one.

This dish was made using leftovers so it’s hard to figure what it cost. I would imagine that each plate probably cost us no more than $2.50.

The other night I made another finance-efficient dinner that tasted outstanding; Cedar Plank Grilled Salmon with Soba Noodles, Roasted Orange Pepper, Pea Pods, and Shitake-Green Onion Salsa. Simple, well-balanced, healthy, organic, and delish!

I got the salmon at Isaacson & Stein Fish Company. It was wild caught at $9.95 per pound. Between my wife and I we only needed 3/4 of a pound, so the fish cost $6 even for both of us. I’ll take fresh wild caught over farmed any day of the week! Grilling it on a Cedar Plank, cost of $1.00, really adds a nice smoky wood flavor to salmon. The beauty of cedar plank grilling is that because the wood needs to be soaked in water for a couple of hours prior to grilling, the fish gets steamed while it’s grilled keeping it nice and moist.

The pepper cost me 37 cents at Stanley’s. Roasting peppers let’s the sugars come out resulting in a sweeter, softer pepper flavor. Since I roasted it on my grill I also got a bit of smokiness to it as well. While at Stanley’s I also got 4 bunches of green onions for $1.00. I only used a half bunch for this dish. The pea pods were also from Stanley’s and cost me 57 cents. You can buy soba noodles from almost any grocery store and shouldn’t cost more than a couple of bucks for 3 servings.

Shitakes can be expensive when purchased fresh, up to $5-6 a container. I do sometimes use fresh shitakes, but for this dish I used some dried ones we had in our pantry that cost $1.o0 for dozen. I only used 4, soaking them in hot water for a couple of hours. Save the water afterwords. It absorbs some of the shitake flavor and makes a great stock for later use.

When you add it all up the entire dish for 2 people only cost $10.34, or $5.17 per person. OK, I also added some Thai Basil to the Salmon when grilling, but I got that from my back porch garden. I also probably used a few pennies worth of Extra Virgin Olive Oil, salt, and pepper. Still, it’s less than five and a half bucks per person. What restaurant can give you a dish of this quality for that price? NONE! Cook at home, cook fresh, cook organic!

Kawabata Family Lunch

So, someone talked me about yesterday’s post.  “Lasagna, what’s the big deal?” I know, it’s a very basic dish. I really just wanted to show that good, well-rounded, organic meals can be whipped up on a budget. I’m going to continue showing different ideas in the future as well.

At any rate, there is a reason that lasagna holds a special place inside my duodenum. You see, my wife is Japanese. I met her when bumming around Tokyo before grey hairs started popping out of my scalp. While I ended up hanging out with her quite a bit on that journey, it wasn’t until my next trip to Japan that I met her parents.

In Japan, it’s typical for parents to meet the “boyfriend” (I use quotes because I think I was married from the first time I talked with her, or at least it feels like I was) for the first time out at a restaurant or a public place. Parents typically do not invite them into their home until after they’ve met. However, my situation was different. Here I am, a hairy Jewish gaijin from Chicago who’s travelled to Belize, Italy, and Kyoto with their daughter. They also know of my love of food and the Iron Chef. Being quite the home gourmets that they are they decided to invite me over for a home cooked meal.

I was expecting some weird Japanese dishes that I’ve never heard of or seen before using ingredients that don’t look like food. Much to my surprise her dad made his special lasagna. Actually, two special lasagnas, one with and one without meat. I have to say, the man can cook Italian! If he had big boozims I’d think he was an Italian grandmother.

Because of how her parents let me into their family, and because her family may very well be the best damn people in the world, I will always have a deep and profound love for homemade lasagna. Oh, and her mom bought a bottle of Coke because all Americans drink Coke. (I prefer sake)

One thing that being unemployed is teaching me is that you don’t have to spend a lot of money in order to eat right. To me, eating right doesn’t mean counting carbs, or taking supplements, or any of that nutritionist crap (I’m a believer in Michael Pollan). There’s nothing wrong with eating animal fat, or bread, or dessert. There is everything wrong with eating too much and eating processed foods brought to you by the Big Food Industry.

At any rate, last night I made some of the best Lasagna you could ever pass through your tracts (and pass it through my tracts I did!). I did it using only fresh, high quality, organic ingredients, and I did it on the cheap.

I don’t buy much at Whole Foods since their prices are sometimes ridiculously high. However, I won’t buy meats from normal chain grocers because they sell meat from sick, hormone and antibiotic pumped animals. In order to save a few shekels The Big Farm Industry feeds livestock unnatural diets causing them to get ill. In turn they need to inject large amounts of antibiotics because the feed is unhealthy to them, not to mention the extremely unsanitary living-quarters. On top of all of that the animals are fed hormones to speed up growth, this causes even more health issues. Basically, if you’re not eating organic naturally fed, humanely raised animals, you’re eating sick animals. Would you eat a moldy tomato? So why eat a moldy cow?

But I digress. I headed over to Whole Foods and got some really nice, fresh ground chicken thigh meat. I opted for chicken instead of the usual beef because I grilled skirt steak (from Olympic Meat Market) the previous night. Variety is the spice of life. I went for thigh meat for a few reasons. One, it’s cheaper. Two, even though it’s higher fat it’s actually healthier for you since it’s heart-healthy unsaturated fat. Three, it has more flavor. 

While there, I noticed that organic zucchini was on sale. A perfect match for lasagna. They also had high quality parmigiano on sale. I had a jar of organic pasta sauce that I got for $2.19 from my last trip to Whole Foods sitting in my pantry. Otherwise I would have made my own sauce that would have cost me roughly the same amount, maybe another dollar or two.

Back home, I also had some lasagna noodles in the cupboard already. One thing when you have no income is that you try to eat what you’ve already bought and stocked. I picked some basil from my back porch garden. I also had some mushrooms that I bought at Stanley’s, where I buy most of my fruits and veggies.

So, I whipped up a bechemel sauce. I, for one, do not think that putting butter, flour, and milk together is too much fat. As long as the dairy comes from good cows and the flour isn’t processed or enhanced or anything unnatural. Then I cooked the ground chicken with onions, garlic, and some of the tomato sauce. I thinly sliced the zucchini and mushrooms. Then I put it all together.

Turned out to be enough for 4 full servings (I try to cook for 4 even though it’s just my wife and I, that way we have a good lunch the next day as well)when paired with a simple mixed green salad with sliced tomatoes. When I add up the costs of everything and divide by the 4 meals I got out of it I ended up making delicious healthy food for about $4 per person. I don’t know about you, but I’d much rather eat that than a $5 foot-long.

Back porch garden

I wish more people would utilize their outdoor spaces more efficiently. I know that outdoor space is precious in cities like Chicago, but look here at what my wife and I did. Our space is only 3.5 feet by 5.5 feet. Since it’s also one of two exits there must be a clear path according to fire code. That didn’t stop us from planting a few veggies and a few herbs to enjoy throughout the summer (come winter we can move the herbs onto our window sills). We have three types of basil; Thai, Spicy Globe, and Sweet. We also have Juliette Tomatoes, Japanese Eggplant, and Rutgers Tomatoes.

So far we’ve enjoyed basil almost every day. I swear those things grow like weeds! It’s just too bad we can’t grow any “weeds” in our makeshift garden. We already have one eggplant that’s almost mature and a dozen little eggplants on the way.

The Rutgers Tomatoes are growing better than the Juliettes, but we’ll get a nice yield from both. It shouldn’t be too much longer before we’re enjoying our tomatoes.

The best part about all of this is that we used all-natural organic soil free of pesticides and chemicals. We keep them watered accordingly and the fruits should taste much better than anything storebought. There’s also some satisfaction in eating something that you grew yourself. I just wish everyone took advantage of little opportunities like this. You’ll end up helping the environment in numerous ways; less produce bought from Big Ag, a notorious pollution machine. It also saves money as purchasing seeds or sprouting plants along with soil costs a lot less than produce at the supermarket. Using organic soil also ensures that your plants will obtain full nutrient capacity. It just makes sense people!

Those of you who watched the episode of CheckPlease that I was on know that I ripped Eleven City Diner apart. Well, actually, I ripped everything apart except for my beloved Café Hoang. But hey, it makes for good TV. Anyway, about a week prior to the episode airing a couple of my dear friends threw a little wedding party for Yuki and me since we got hitched in Japan and none of our American friends find us important enough to have made the journey to the land of the rising sun (Just kidding, you know I love you all, well, at least some of you). So, they had a little party for us here in Chicago. Not knowing that I reviewed Eleven City Diner, one of my friends had gotten Yuki and me some gift certificates there as a gift. I asked him if it was a joke and his response was, “It’s Jew food, I thought you’d like it.” He’s of Persian decent (He claims Persia not Iran) so there’s an ongoing racial joke exchange between us. He didn’t know, it was a very nice gesture and much appreciated. Ashkan, love ya babe!

 

So, Yuki and I invited a couple of friends to join us there for lunch today in order to utilize the gift certificates. I was a little excited/nervous to see what kind of reaction I’d get from Brad, the owner, when he saw me walk through his doors. Much to my dismay, he’s out of town. I was looking forward to kibbutzing with him, oh well.

 

Funny thing is that we got the same waitress from when I went there for CheckPlease. She had a weird look on her face when she saw me. I think she recognized me from the episode. Needless to say, the service was impeccable! The food, well, the food was pretty much the same from my last visit.

 

Yuki and each ordered the Schwartzy sandwich, brisket piled high on a challah bun. The challah was great! They don’t make the bread though, so I can only compliment them for purchasing a good piece of leavened dough and not making it. The brisket on the other hand was absolutely butchered! They sliced it thin and served it with au jus. What Jew in their right mind would do that to a perfectly good brisket, slice it thin? Poor piece of brisket. That took away all of the characteristics of the piece of meat. Brisket should be sliced thick to showcase the wonderful texture it gets when slowly cooked allowing that nice layer of fat to melt into every little microscopic crevice of the meat. My mouth is watering just typing that sentence. The way it was served it could have been any old roast beef. I’m beginning to wonder if Brad really is Jewish or if it’s just a marketing scheme to push large sandwiches on people.

 

Our friends shared a large cobb salad and a pastrami sandwich. The salad was, well, it was a large cobb salad. Nice fresh ingredients, but nothing special. We found a hair in it, but that was only after we divided it onto different plates so that hair could have been one of ours (not Peter’s, mother-nature made sure of that). No real complaints there. The pastrami was about the same as it was on my CheckPlease review, really good quality meat, but lacking that brininess and thick coating of pepper that pastrami should have. Not bad, just not really good.

 

When the check came that’s when I remembered exactly why I don’t eat here. Three sandwiches, one salad, one side of fries, and two orange juices……$60! Brad, come on man, you’re not serving food in an airport terminal. The prices are way too high for what is served. I say that, but the place is always full, so I guess he doesn’t need to lower the prices. It’s just not good value in my humble opinion (yeah right, my opinion is anything but humble). I mean, he has a Chicago-style Vienna dog on his menu for $8.95! At that price all wieners should be satisfied. Potato Latkes for $7.95, I’m sorry, but no potato costs eight bucks.

 

It was funny, when we left one of the servers came up to me and asked, “Was anything good?” He had a big smile on his face when he asked. I can definitely appreciate the sense of humor.

 

This may be the last time I ever go back to Eleven City Diner. There isn’t too much wrong with the food aside from improper seasoning and weird utilization of various cuts (not to mention his rather large, flavorless balls….matza balls that is). For the money however, I just can’t fathom spending what it takes to eat there, especially when Manny’s is just down the street serving properly seasoned pastrami as well as latkes for a buck. Good thing I had the gift certificates.
